First, wash the cucumber peppers thoroughly and pat them dry. Then, make a deep lengthwise slit along the length of each pepper. Avoid cutting all the way through; stopping about two-thirds of the way will maintain their shape and make it easier to insert the cheese.

Using a spoon or a small utensil, carefully scoop out the seeds from the inside of the slit peppers. Place one string cheese stick into the hollowed-out space inside each pepper. If the string cheese is too long, you can cut it in half.
