Make Bacon Curry Packed with Canned Corn
Adding plenty of canned corn enhances both the texture and flavor. This is a recipe for Bacon Curry, a dish filled with my college memories.
Ingredients
- Canned corn, 5 Tbsp (drained)
- Bacon, 2 strips
- Onion, 1/2 medium
- Carrot, 1/2 medium
- Curry powder, 2 Tbsp
- Salt, 1 tsp
- Water, 1.5 cups (approx. 270ml)
Cooking Instructions
Step 1
First, let’s prepare the vegetables that will add flavor to the curry. Dice the onion into approximately 1cm cubes. Be careful not to chop them too small, as they might burn easily when sautéed.
Step 2
Dice the carrot into similar 1cm cubes as the onion. Since carrots are a bit firm, cutting them into appropriate sizes rather than too small will maintain a pleasant chewiness. It’s good to chop them slightly as if dicing.
Step 3
Chop the bacon into bite-sized pieces, about 1-1.5cm in length. Drain the canned corn thoroughly in a sieve. This step is crucial to prevent a mushy texture and enhance its savory flavor.
Step 4
Heat a pan with a little cooking oil. Add the chopped onion, carrot, and bacon. Sauté until the bacon turns a nice brown color and starts to release its fat, developing a rich aroma. Cook over medium heat, stirring occasionally, until everything is well combined and the bacon is nicely browned.
Step 5
Once the bacon turns a tempting brown, add 1 cup (approx. 180ml) of water and 1 tsp of salt. Cover the pan with a lid and simmer over medium heat for about 5 minutes. This allows the vegetables to soften and their natural sweetness to infuse into the broth.
Step 6
Now, let’s make the curry roux. In a bowl, combine 2 Tbsp of curry powder with a little less than half a cup (approx. 90ml) of water. Whisk it well until smooth and lump-free. A smooth mixture ensures a creamy curry sauce.
Step 7
When the vegetable mixture is simmering and the broth starts to boil, slowly pour in the prepared curry mixture from step 5, stirring continuously to prevent lumps. Keep stirring as it simmers for about 3-5 minutes until the curry thickens.
Step 8
As the curry begins to thicken, add the drained canned corn and simmer for another 2 minutes. The corn’s sweetness and popping texture will create a unique flavor profile with the curry. Taste and adjust the seasoning if needed, adding a tiny pinch of salt if it’s bland. Continue simmering over low heat until it reaches your desired consistency.
