Main Ingredients

  • 2 servings of warm cooked rice
  • About 10 slices of thick-cut bacon (approx. 100-150g)
  • 1/4 head of fresh napa cabbage
  • 10 fresh perilla leaves (kkaennip)
  • 2 fresh eggs
  • A handful of toasted nuts (walnuts, almonds, etc.)
  • A pinch of sesame seeds

Sauce

  • 1 Tbsp soy sauce
  • 2 Tbsp kelp broth (or water)
  • 1 Tbsp plum extract (maesilcheong)
  • 1/2 Tbsp sesame oil
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, wash the napa cabbage thoroughly, removing any outer wilted leaves. Shake off excess water and thinly julienne it into pieces about 1cm wide. Wash the perilla leaves, remove excess water, roll them up, and thinly slice them into shreds. Set the shredded vegetables aside.

Cut the thick-cut bacon into bite-sized pieces, about 2-3cm long. Briefly blanch the bacon in boiling water for about 30 seconds; this helps remove excess fat and makes it more savory. Drain the blanched bacon on a sieve.

Heat a pan over medium-low heat without any oil. Add the blanched bacon and cook slowly until it’s golden brown and crispy. This will enhance its flavor. While the bacon is cooking, fry the eggs in the same pan or a separate one. You can cook them to your preference, either sunny-side up or over easy.

Spoon the warm cooked rice into a serving bowl. Sprinkle some ground nuts (you can grind walnuts or almonds yourself or use store-bought) over the rice for added texture and nutty flavor. Add a pinch of sesame seeds as well. This step adds more complexity to the simple rice base.

Arrange the crisp julienned napa cabbage and the fragrant shredded perilla leaves attractively over the rice. Top with the crispy bacon and the soft fried egg. This creates a visually appealing and delicious bibimbap.

Finally, prepare the sauce and serve. In a small bowl, mix together the soy sauce, kelp broth, plum extract, and sesame oil. If you like a little spice, you can add a touch of gochujang.
