Ingredients

  • 4 strips of thick-cut bacon
  • 1/2 medium onion
  • 1 Korean chili pepper (optional, for heat)
  • 2 large eggs
  • 1.5 bowls of cooked rice (day-old rice works great!)

First, prepare all your ingredients. Dice the bacon into approximately 1-1.5 cm pieces. Finely dice the onion into similar-sized pieces as the bacon. If using, mince the Korean chili pepper. Removing the seeds will reduce the heat, so adjust according to your preference.

Heat a skillet or wok over medium heat and add the cooking oil. Add the diced bacon and onion to the pan. Sauté until the bacon is rendered and lightly browned, and the onions are softened and translucent. This step allows the bacon fat to infuse the onions with flavor.

Once the bacon and onions are cooked and fragrant, push them to one side of the pan. Crack the two eggs into the cleared space. Lightly scramble the eggs until they are just set, resembling a soft scramble. Then, gently mix the scrambled eggs with the bacon and onion mixture.
