A delightful pasta dish to tackle picky eating! I decided to add pollack roe I had at home to create a creamy pasta sauce. It adds a savory depth and umami that babies love, making it a dish they’ll surely enjoy. It’s a unique way to introduce new flavors and textures.

Ingredients

  • 20 strands of pasta (about 200g)
  • 8 frozen shrimp (peeled and deveined)
  • 2 cloves garlic (thinly sliced)
  • 1 slice baby cheese
  • 11g pollack roe (membrane removed, roe only)
  • 35g onion (finely chopped or thinly sliced)
  • 5g unsalted butter

Cooking Instructions

Step 1

Prepare all your ingredients before you begin cooking. Finely chop or thinly slice the onion so it’s easy for your baby to eat. Slice the garlic thinly to add aroma. Thaw the frozen shrimp in cold water, then remove the dark vein using a skewer and rinse them thoroughly. Carefully remove the outer membrane of the pollack roe, separating only the eggs. Set the baby cheese aside for later.

To cook the pasta, bring a pot of generously salted water to a rolling boil over high heat. Once boiling, cut the pasta strands into 4-5 pieces and add them to the water. Cook them for 1-2 minutes less than the package instructions suggest, aiming for an al dente texture. This ensures the pasta won’t become too mushy when finished in the sauce.

While the pasta is cooking, heat a deep pan or wok over medium heat. Add the unsalted butter, then add the sliced garlic and chopped onion. Sauté gently over low heat until the onions become translucent and the garlic is fragrant and lightly golden. Cooking them slowly will bring out their natural sweetness and flavor.

Once the onions and garlic are softened and lightly browned, pour in 100ml of milk to create a creamy sauce. Bring the milk to a gentle simmer, then add the prepared pollack roe and the shrimp to the pan. Let them cook in the warming sauce; the pollack roe will dissolve slightly, imparting a wonderful umami and subtle saltiness.

As the milk mixture begins to simmer, add the drained pasta directly into the pan. If desired, sprinkle in a pinch of black pepper. Using a spatula or tongs, stir gently and continuously to coat the pasta with the sauce and prevent it from sticking. Allow the sauce to thicken slightly over medium-low heat, reducing to your desired consistency.

When the sauce has thickened and coats the pasta beautifully, add the slice of baby cheese. Stir until the cheese is fully melted, making the sauce extra creamy and rich. Taste the pasta to check the seasoning. For babies, it’s best to keep the seasoning mild, so adjust salt as needed or omit it entirely.
