Baby’s Chicken Leg and Vegetable Porridge
Simple Chicken Porridge Recipe Using Chicken Legs from Your Fridge
I did a fridge clear-out before the Lunar New Year and ended up emptying it *completely*! When I went to prepare my baby’s meals, all I had left was a pack of chicken legs. After some thought, I decided to make chicken leg porridge. It’s the same process as making chicken broth, but then you cook porridge using that rich chicken broth. 🙂
Main Ingredients- 400g chicken legs
- 1/2 onion
- 1 green onion (scallion)
- 5-6 cloves garlic
Seasoning & Other Ingredients- 1.5L water
- 1/2 cup glutinous rice (sweet rice)
- 1 Tbsp sesame oil
- Salt to taste (optional or very little for baby food)

Cooking Instructions
Step 1
Prepare the chicken legs by rinsing them thoroughly. If you prefer a softer texture for your baby, consider removing the skin. Trim them into bite-sized pieces.
Step 2
In a pot, combine the chicken legs, roughly chopped onion, green onion, whole garlic cloves, and 1.5L of water. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer for about 1 hour to extract a rich chicken broth. Skim off any foam that rises to the surface during the initial boiling to remove any unpleasant odors.
Step 3
While the chicken is simmering, soak the glutinous rice in cold water for at least 30 minutes. Drain the soaked rice in a sieve.
Step 4
Once the chicken is cooked, remove it from the pot and let it cool slightly. Then, debone the chicken and finely shred or mince the meat. (For baby food, mince it very finely.) Heat 1 Tbsp of sesame oil in a pan over medium-low heat. Add the soaked glutinous rice and stir-fry until the rice grains become translucent and develop a sticky texture. If you have finely chopped vegetables suitable for your baby, you can add them and stir-fry together at this stage for extra nutrition.
Step 5
Once the rice is stir-fried, gradually add ladlefuls of the chicken broth made in step 1, stirring constantly as you cook until the rice is fully tender and has softened into a porridge consistency. Add more broth as needed to achieve your desired consistency. Cook for about 15-20 minutes, stirring, until the glutinous rice breaks down smoothly. Finally, season with a tiny pinch of salt to taste for your baby, or omit it altogether. Your delicious porridge is ready!
