Inspired by the popular variety show ‘Youn’s Kitchen,’ I’ve created a special version of Chestnut Galbi Patties tailored for babies. Made without any salt or sugar, these patties allow your little one to enjoy the pure, natural flavors of the ingredients. For slightly older children, you can add a touch of soy sauce or sugar to enhance the taste. The tender texture and subtle sweetness of the chestnuts are sure to captivate your child’s palate.

Galbi Patty Mixture
  • 160g Ground Beef
  • 130g Ground Pork
  • 30g Scallions (use both white and green parts)
  • 35g Shiitake Mushrooms
  • 50g Onion Jam (store-bought or homemade)
  • 1 tsp Garlic Powder
  • 1 Tbsp Sweet Rice Flour (Chapsal Garu)
  • 1/2 Tbsp Sesame Oil

Chestnut Filling (Yullan)
  • 110g Steamed and Mashed Chestnuts
  • 40g Grated Pear (freshly grated)

Cooking Instructions

Step 1

Gently pat the ground beef with paper towels to remove excess blood. Properly draining the blood is key to a clean, fresh taste without any gamey odor.

Step 2

Carefully trim any visible tendons and excess fat from the drained beef. Cut the beef into small pieces (about 1-2 cm) suitable for grinding. This step helps achieve a more tender texture in the final galbi patties.

Step 3

Place the prepared beef into a food processor and grind it to your desired consistency. Avoid over-processing; a slightly coarse texture is preferable for a pleasant chew.

Step 4

Finely chop the scallions, using both the white and green parts. Lightly rinse the shiitake mushrooms under running water, pat them dry, remove the tough stems, and slice them thinly. Finely mince the scallions and shiitake mushrooms, either in the food processor or by hand with a knife.

Step 5

In a large mixing bowl, combine the finely ground beef, ground pork, chopped scallions, and minced shiitake mushrooms.

Step 6

Add the onion jam, garlic powder, sweet rice flour, and sesame oil to the bowl. Knead the mixture vigorously with your hands until all ingredients are well combined and the mixture becomes sticky and cohesive. The sweet rice flour will help bind the patties and give them a chewy texture. Knead for about 5 minutes.

Step 7

Steam the chestnuts until tender. Once cooked, peel them while still warm and mash them thoroughly with a fork or a masher. Mix the mashed chestnuts with the grated pear in a separate bowl until well combined to create the chestnut filling. The pear adds sweetness and helps achieve a smoother consistency.

Step 8

Shape the galbi patty mixture into bite-sized portions, roughly the size of your thumb. Form the chestnut filling into small balls, about 5g each. Adjust the size according to your baby’s eating habits and preference.

Step 9

Take about 10g of the galbi patty mixture and flatten it into a small disc. Place one of the pre-formed chestnut filling balls in the center. Carefully wrap the patty mixture around the filling, ensuring it is completely enclosed and sealed.

Step 10

Gently shape the covered patty into a ball or an oval, making sure the chestnut filling is completely sealed inside to prevent it from leaking out during cooking. Smooth the surface for a neat appearance.

Step 11

For uniform patties, you can weigh the galbi mixture and chestnut filling portions beforehand and divide them accordingly. This method makes it much easier to create consistently sized patties, ensuring even cooking.

Step 12

You can shape the patties into cute, round, and plump shapes or into cylindrical shapes that are easy for little hands to hold, like mini logs. Fun shapes can make mealtime more engaging for children.

Step 13

Bake the shaped patties in a preheated oven at 170°C (340°F) for about 15-20 minutes. Alternatively, lightly oil a pan and cook over low heat, turning occasionally until golden brown on all sides. While delicious as is, for an extra glaze and moisture, you can simmer the cooked patties briefly in pear juice (unsweetened for babies) in a saucepan. (However, babies usually love them just as they are!)
