Today, I’m sharing a recipe for sushi balls, a delightful rice ball version of sushi! We’ll season fluffy rice with a sweet and tangy sushi vinegar, then top it with fresh smoked salmon and creamy avocado. Drizzled with a zesty horseradish sauce and served with tangy pickled onions, these sushi balls are incredibly delicious. Their beautiful presentation makes them a fantastic option for packed lunches or elegant home party food.

  • Warm cooked rice 420g (approx. 2 bowls)
  • Onion 170g (1 medium)
  • Avocado 200g (1 medium)

Horseradish Sauce

  • Mayonnaise 3 Tbsp
  • Plum extract (Maesilcheong) 2 Tbsp
  • Wasabi (Japanese horseradish) 1.5 tsp
  • Pepper, a pinch

Sushi Vinegar

  • Rice vinegar 3 Tbsp
  • Sugar 1.5 Tbsp
  • Salt 0.5 tsp

Pickled Onions

  • Sugar 1 Tbsp
  • Salt 0.5 tsp
  • Vinegar 2 Tbsp

Cooking Instructions

First, let’s gather all the ingredients needed for our delicious Avocado Smoked Salmon Sushi Balls.

Now, let’s prepare the sushi vinegar. In a small bowl, combine 3 Tbsp rice vinegar, 1.5 Tbsp sugar, and 0.5 tsp salt. Stir well until the sugar and salt are completely dissolved.

Pour the prepared sushi vinegar over 2 bowls (about 420g) of warm cooked rice. Gently mix with a rice paddle, being careful not to mash the rice grains. Once evenly combined and glossy, let the rice cool slightly so it’s easier to handle. If you’re in a hurry, you can speed up the cooling process by fanning it with a small fan.

Thinly slice the onion. In a bowl, combine the sliced onion with 0.5 tsp salt, 2 Tbsp vinegar, and 1 Tbsp sugar. Mix well and let it pickle for about 10 minutes until tender-crisp. After pickling, firmly squeeze out excess water from the onions using your hands.

Let’s make the horseradish sauce. In another bowl, combine 3 Tbsp mayonnaise, 2 Tbsp plum extract, 1.5 tsp wasabi, and a pinch of pepper. Mix everything together until smooth and well incorporated. This creates a creamy and flavorful sauce.

Here’s a pro tip for cutting avocados: Make a deep cut along the pit in the center of the avocado. Then, hold the avocado with both hands and gently twist to separate it into two halves. To remove the pit, carefully insert the knife blade into the pit and twist gently. (Refer to the video for a more detailed demonstration.)

Peel the avocado and then cut it into desired portions (usually 2-3 slices). The skin of the avocado usually peels off quite easily by hand.

When slicing the avocado, hold your knife vertically and use the tip to cut. This technique helps prevent the avocado from sticking to the knife, resulting in cleaner slices. Watching the video will provide a clearer visual guide for this slicing method.

Now it’s time to form the sushi balls. Wear disposable gloves and take a portion of the cooled sushi rice, about the size of a child’s fist. Gently shape it into a round ball.

Here’s how to assemble the sushi balls: 1. Lay a piece of plastic wrap on your plate and arrange the sliced avocado. 2. Cut the smoked salmon into about 8cm lengths and place them over the avocado. 3. Position the sushi rice ball on top of the salmon. 4. Use the plastic wrap to firmly enclose the ingredients, shaping them into a neat ball.

Twist the ends of the plastic wrap a couple of times to secure the shape and make it look more appealing. This step is also easier to understand by watching the video.

Arrange the beautifully shaped sushi balls on a serving plate. Add the pickled onions alongside for a colorful presentation.

To apply the horseradish sauce neatly, transfer it into a ziplock bag and snip off a tiny corner with scissors. Squeeze the sauce over the sushi balls as desired.
