Marinated Shrimp and Avocado Bibimbap: A Delicious Solo Lunch
On days I have lunch alone, I often get caught up with household chores or styling props, leading me to skip meals or grab something quick. Today, however, I made sure to enjoy my lunch on time. I whipped up a bibimbap using marinated shrimp, avocado, and fresh vegetables from my fridge. It was so incredibly delicious, I almost didn’t want to share!
Main Ingredients- 3 Marinated Shrimps (for a delightful chewy texture)
- 1/2 ripe Avocado (adds creamy richness)
- 50g Spring Greens (like ‘Bomdong’, for crispness and a touch of sweetness)
- 1 bowl Warm Cooked Rice (adjust portion to your liking)
Seasoning Sauce- 1 Tbsp Sesame Oil (for a nutty aroma)
- 1 tsp Toasted Sesame Seeds (sprinkle for extra flavor!)
- 1 tsp Wasabi (enhances the shrimp’s taste)

Cooking Instructions
Step 1
First, thoroughly wash the spring greens and ensure they are completely dry. For the avocado, slice it in half, remove the pit, peel, and then thinly slice it. Get your fresh veggies ready!
Step 2
Carefully peel the marinated shrimp. Be gentle to avoid breaking the plump shrimp meat – this is key for maintaining their texture.
Step 3
Separate the heads from the shrimp bodies. Don’t discard the tomalley (the green innards in the head)! Set it aside to use when making the sauce. This will add a wonderfully deep and rich flavor.
Step 4
In a small bowl, combine 2 tablespoons of the shrimp marinating liquid. Add 1 teaspoon of wasabi and 1 tablespoon of sesame oil. For an extra boost of umami, mix in a small amount of the reserved shrimp tomalley.
Step 5
Finely chop a Cheongyang chili pepper (a Korean green chili) and add it to the sauce, if you enjoy a spicy kick. Feel free to omit this step if you prefer a milder flavor.
Step 6
Place the warm rice in a large bowl. Artfully arrange the prepared spring greens, sliced avocado, and peeled marinated shrimp on top of the rice. The vibrant colors are sure to whet your appetite.

Finally, drizzle the prepared spicy and savory sauce over the ingredients. Mix everything together well with chopsticks or a spoon. Enjoy the burst of diverse flavors and aromas with every bite!
