This time, I wanted to prepare my husband’s absolute favorite, Dwaeji Galbi Jjim, to boost his energy. As Chuseok is just around the corner, this dish is an indispensable part of the holiday feast! I hope you enjoy this delicious pork rib stew as a special gift for your loved ones, or as a comforting dish to share during the Chuseok holidays. Here is my special soy-braised pork rib recipe!

For Blanching Ribs

  • Doenjang (soybean paste), 2 Tbsp
  • Mirin (rice wine), 1 Tbsp

Pork Rib Stew Marinade

  • Water, 1L
  • Soy sauce, 120ml
  • Mirin (rice wine), 10 Tbsp
  • Sugar, 4 Tbsp
  • Apple juice, 5 Tbsp
  • Minced garlic, 5 Tbsp
  • Black pepper, a pinch
  • Minced green onion, 2 Tbsp
  • Honey, 2 Tbsp

Cooking Instructions

Step 1

Lightly rinse the pork ribs for stew under cold water a couple of times to remove any blood or impurities. Set aside.

Fill a deep pot with plenty of water, add 2 Tbsp of doenjang and 1 Tbsp of mirin, and bring to a rolling boil over high heat. Once boiling, add the pork ribs and blanch for 10 minutes. This step helps to remove any gamey smell and tenderize the meat.

After blanching for 10 minutes, rinse the pork ribs thoroughly under running water. Be sure to meticulously clean off any bone fragments or debris. This ensures a completely odor-free stew, allowing you to enjoy a clean and delicious flavor.

Now, let’s make the crucial marinade for the delicious pork rib stew. In a bowl, combine 1L of water, 120ml of soy sauce, 10 Tbsp of mirin, 4 Tbsp of sugar, 5 Tbsp of apple juice, 5 Tbsp of minced garlic, a pinch of black pepper, and 2 Tbsp of minced green onion. Mix well until thoroughly combined.

Place the blanched and cleaned pork ribs into a pot. Pour the prepared marinade evenly over the ribs, ensuring they are well submerged.

It’s time to start cooking! Begin by bringing the stew to a boil over high heat. The total cooking time for Dwaeji Galbi Jjim is approximately 50-55 minutes. Once the marinade is simmering, cover the pot with a lid, reduce the heat to medium, and let it simmer for 30 minutes. During this time, the meat will become tender.

While the pork is simmering, prepare your vegetables. You can use any vegetables you have on hand, but I’m using carrot, potato, onion, green onion, shiitake mushroom, and red chili pepper. Score the shiitake mushrooms decoratively. Round off the edges of the carrots and potatoes; this helps them maintain their shape as they cook. Slice the red chili pepper thinly for garnish, and cut the green onion into large, long pieces.

After 30 minutes, open the lid. The marinade should have reduced slightly. Add the carrots and potatoes to the pot, as they require more cooking time. Next, stir in 2 Tbsp of honey or corn syrup for added sweetness. Reduce the heat to medium-low and continue to cook for another 15 minutes, allowing the flavors to meld beautifully with the meat and vegetables.

This is the final simmering stage. Reduce the heat to low. For presentation, you can transfer about 1kg of the stew to a separate serving pot if you plan to bring the pot to the table. (Tip: If cooking the full 2kg, continue simmering all ingredients together in the main pot). Add the onion, green onion, red chili pepper, and shiitake mushrooms. Simmer for an additional 5-10 minutes over low heat, ensuring the vegetables are tender but not overly mushy.

Don’t forget to ladle the simmering sauce over the meat and vegetables periodically to ensure even flavor distribution. Your 2kg batch of Dwaeji Galbi Jjim is now complete!
