  • 1 Tbsp Fine Gochugaru (Korean chili powder)
  • 3 Tbsp Water

Cooking Instructions

Step 1

In a clean bowl, combine 5 tablespoons of rice nuruk, 3 tablespoons of doenjang, 1 tablespoon of fine gochugaru, and 3 tablespoons of water. Use a spatula or spoon to stir thoroughly until all ingredients are evenly mixed without any lumps. Transfer the mixed ssamjang to an airtight container and let it ferment at room temperature for 2-3 days. During fermentation, the natural sweetness and deep flavor of the rice nuruk will develop.

Step 1

Step 2

The fermented rice nuruk ssamjang is delicious as is, but here are some tips to enhance its flavor even further. Each time you serve, take out a portion of the ssamjang and mix in a couple of drops of sesame oil and your favorite nuts (e.g., crushed walnuts, pine nuts). This adds a wonderful nutty texture and aroma, elevating the taste. Making rice nuruk ssamjang is truly simple! Just mix the ingredients in the proportions mentioned above and let it age for a few days, and anyone can easily create delicious ssamjang. And just like that, your homemade rice nuruk ssamjang is complete!

Step 2

Step 3

This recipe does not include added sugar or sweeteners. The subtle sweetness from the rice nuruk itself, combined with the savory depth of doenjang and the mild spiciness of gochugaru, creates a perfectly balanced and delicious ssamjang without any additional flavorings. While the basic ssamjang is excellent on its own, for a more personalized taste, you can transfer a small amount to a serving dish and mix in ingredients like sesame oil, sesame seeds, minced garlic, or chopped nuts according to your preference. Ssamjang recipes can vary slightly from household to household, so feel free to customize with additional ingredients after making the basic rice nuruk ssamjang. Making ssamjang isn’t difficult at all, so why not give it a try!
