  • 200g Tapioca Starch
  • 20g Sweet Rice Flour
  • 30g Bread Flour
  • 50g Egg (at room temperature)
  • 25g Corn Syrup
  • 60g Milk
  • 20g Cooking Oil
  • 3g Salt
  • 40g Butter (at room temperature)

Potato Filling Ingredients

  • 350g Boiled Potatoes
  • 2 Tbsp Milk
  • 2 Tbsp Mayonnaise
  • 2 Tbsp Butter
  • 2 Tbsp Sugar
  • 1 Pinch Salt
  • Mozzarella Cheese (to taste)

Topping for Coating

  • 1/2 cup Soybean Flour
  • 1 Tbsp Black Sesame Powder

Cooking Instructions

Step 1

First, measure and prepare all your ingredients. Ensure the eggs and butter are at room temperature. It’s convenient to combine and measure all the dry ingredients (tapioca starch, sweet rice flour, bread flour) together.

Step 1

Step 2

In a bowl, combine the measured dry ingredients and pour in the milk. Gently mix to prevent lumps from forming.

Step 2

Step 3

Add the corn syrup and room-temperature egg to the mixture of dry ingredients and milk. It’s okay if it’s not fully combined yet.

Step 3

Step 4

Using a spatula, lightly mix until the dry and wet ingredients are roughly combined. Be careful not to overmix at this stage.

Step 4

Step 5

Once the dough is somewhat mixed, add the cooking oil and room-temperature butter. Knead them into the dough until well incorporated. Ensure the butter melts and blends in.

Step 5

Step 6

Now, use your hands to knead the dough until it becomes smooth and glossy. Thorough kneading is crucial for developing a chewy texture. Continue kneading until the dough has good elasticity.

Step 6

Step 7

Once the dough is smooth and shiny, wrap it tightly with plastic wrap and refrigerate for 30 minutes. This resting period will make the dough softer and easier to handle.

Step 7

Step 8

While the dough is resting, let’s make the delicious potato filling. Place the boiled potatoes in a bowl and mash them thoroughly using a fork or a potato masher until smooth.

Step 8

Step 9

Add 2 tablespoons of milk to the mashed potatoes and mix well to eliminate any lumps. The milk helps to moisten the potatoes, creating a smoother filling.

Step 9

Step 10

Stir in 2 tablespoons of mayonnaise and mix evenly with the potatoes. Mayonnaise adds a richer flavor to the potato filling.

Step 10

Step 11

Next, add 2 tablespoons of butter and mix it well with the potatoes. The butter will melt, adding a savory and creamy element to the filling.

Step 11

Step 12

Finally, add a pinch of salt and 2 tablespoons of sugar, and mix everything thoroughly to complete the filling’s taste. Taste and adjust the sugar or salt as needed according to your preference.

Step 12

Step 13

Now it’s time to shape the bread. Take the rested dough and divide it into portions of approximately 80g each. Divide the filling into portions of about 60g each. (Feel free to adjust the sizes according to your preference.)

Step 13

Step 14

Place one portion of the outer dough on your palm and gently press it down to form a round, flat shape. Make the edges slightly thinner than the center.

Step 14

Step 15

Place a generous amount of the prepared potato filling in the center of the flattened dough. Add mozzarella cheese to your liking. Then, carefully gather the edges of the dough to enclose the filling, like making a dumpling, and pinch to seal tightly.

Step 15

Step 16

Gently roll the shaped bread dough in the topping mixture of soybean flour and black sesame powder, ensuring it’s evenly coated. After coating, use a chopstick to lightly press the surface of the bread, creating natural indentations to mimic the appearance of a real potato.

Step 16

Step 17

Bake the fake potato breads in a preheated oven at 180°C (350°F) for about 20 minutes, or until golden brown. Your delicious fake potato breads are ready! They taste best when served warm.
