  • 2 slices of bread (you can also use whole wheat or other bread to your preference)
  • 2 slices of thick pork cutlet (use store-bought or homemade)
  • 20g fresh lettuce (or romaine, shredded cabbage, etc.)
  • 1 Tbsp mayonnaise
  • 0.5 tsp wasabi paste (adjust amount to taste)
  • 2 Tbsp tonkatsu sauce (store-bought or homemade)

In a small bowl, combine 1 Tbsp of mayonnaise and 0.5 tsp of wasabi paste. Mix well until smooth to create the wasabi mayo sauce. Adjust the amount of wasabi according to your preference.

Thoroughly wash the fresh lettuce under running water. Pat it dry completely with paper towels or a clean cloth to remove excess moisture, as residual water can make the sandwich soggy. Trim any tough stem ends.

Prepare the tonkatsu by either deep-frying it in oil until golden brown according to package instructions, or baking it in an air fryer until crispy. It’s important to cook it over medium-low heat to ensure it’s cooked through without burning. Once cooked, place the tonkatsu on paper towels to drain any excess oil.

Spread half of the prepared wasabi mayo sauce (0.5 Tbsp each) evenly on the inner side of each slice of bread, reaching the edges using the back of a spoon. This step helps prevent the bread from becoming soggy and adds extra flavor.

On one side of the cooked tonkatsu, evenly spread 1 Tbsp of tonkatsu sauce. The sauce will soak into the cutlet, enhancing its rich flavor.

Carefully place the tonkatsu (with sauce) onto one of the bread slices that has been spread with wasabi mayo. Ensure the tonkatsu fits within the bread’s edges to prevent it from spilling out.

Arrange the prepared lettuce on top of the tonkatsu. Then, place the other slice of bread (wasabi mayo side down) on top and gently press down to secure the sandwich. Be careful not to press too hard, as the fillings might squeeze out.
