Ingredients

  • 2 small onions
  • 1 large potato
  • A little bit of carrot
  • 3 chicken breast pieces
  • 3 slices of butter
  • 500ml milk
  • 1 tablespoon ketchup
  • 1 packet of India Butter Chicken Curry paste

Cooking Instructions

Step 1

First, prepare the Butter Chicken Curry paste from the brand ‘Kitchens of India’. You can easily purchase this online or at large supermarkets.

Step 1

Step 2

For the vegetables, onions are a must. The rest of the ingredients can be any vegetables you have at home or prefer. Feel free to use what you have!

Step 2

Step 3

It’s best to chop the vegetables finely. This helps them cook evenly and absorb the curry’s flavors beautifully.

Step 3

Step 4

I cut the chicken breast into large chunks. This size ensures the chicken stays tender and juicy without falling apart during cooking.

Step 4

Step 5

Heat a pot over medium-low heat. Add the 3 slices of butter and let them melt. Then, add the finely chopped onions and sauté them, being careful not to burn them. The butter will add a wonderful richness.

Step 5

Step 6

For an even deeper flavor, it’s ideal to cook the onions until they turn a rich brown color. However, if you’re short on time, sautéing them until they are golden brown is perfectly fine.

Step 6

Step 7

Once the onions are nicely browned, add the chicken breast pieces. Turn the heat to medium and stir-fry the chicken. Sprinkle a little black pepper to enhance the flavor and cook until the outside of the chicken is lightly browned.

Step 7

Step 8

When the exterior of the chicken is cooked and lightly browned, add the remaining chopped vegetables (like potatoes and carrots) and stir-fry them together. Cook until the vegetables are slightly softened.

Step 8

Step 9

Once the vegetables are about halfway cooked, push them to one side of the pot. Add the curry paste to the cleared space. Pour in 500ml of milk and gently stir to dissolve the paste without lumps.

Step 9

Step 10

The curry paste is quite thick, so to ensure it dissolves smoothly, push the other ingredients aside, add the paste, and then use a spatula to mash and mix it with the milk directly from the bottom of the pot. This technique helps create a silky smooth sauce.

Step 10

Step 11

After smoothly incorporating the curry paste, cover the pot and let it simmer over medium heat for about 20 minutes. Stir occasionally. This simmering time is crucial for developing the authentic, complex flavors of Indian curry.

Step 11

Step 12

After 20 minutes, adjust the consistency. If you prefer a thinner curry for pouring over rice, add more milk or water and simmer for an additional 5 minutes. If you like it thicker to serve with naan or bread, or to spoon over rice, you can stop cooking now. Taste and adjust seasoning with salt and pepper if needed. Finally, stir in 1 tablespoon of ketchup for a touch of sweetness and balance. Your delicious curry is ready!

Step 12

Step 13

This ‘Kitchens of India’ Butter Chicken Curry is so good, you won’t need to go to a restaurant! For an extra touch, drizzle some plain yogurt over the finished curry and serve with warm tortillas or naan. It’s like having an Indian restaurant experience at home.

Step 13

Step 14

Why spend money on expensive dining out or settle for generic store-bought curry mixes? If you’ve always wanted to make a truly authentic and delicious curry at home, exactly to your liking, follow this recipe!
