Ingredients- 600g sweet red bean paste
- 30g agar powder
- 400g water
- 70g brown sugar
- 2g salt
- 20g corn syrup
Cooking Instructions
Step 1
First, carefully measure 30g of agar powder and dissolve it in 400g of cold water, stirring until there are no lumps. Gently heat over low heat, stirring constantly, until the agar powder is fully dissolved. It’s crucial to simmer on low heat after it starts boiling to ensure complete dissolution.
Step 2
Once the agar powder has completely dissolved and looks clear, add 2g of salt and stir until dissolved. Next, add 70g of brown sugar and stir until the sugar is fully incorporated. Finally, add 600g of red bean paste and 20g of corn syrup. Cook over medium-low heat, stirring continuously with a spatula to prevent clumping. Keep stirring to prevent sticking to the bottom of the pot. Continue cooking until the mixture thickens enough to slightly pull away from the bottom of the pot.
Step 3
Carefully pour the cooked red bean mixture into a prepared mold or a square container. Use a spatula to smooth the surface of the jelly. If you like, you can also add walnut pieces on top for added texture and a nutty flavor. Alternatively, you can mix some crushed walnuts directly into the red bean paste mixture.
Step 4
Let the mold cool at room temperature, then refrigerate for about 2-3 hours, or until completely firm. Once the red bean jelly has set firmly, carefully remove it from the mold and slice it into bite-sized pieces. Your authentic homemade red bean jelly is now complete!
