  • 300g ground pork
  • 4 x 15cm rice cakes (garaetteok)
  • 1/2 carrot
  • 1/2 onion
  • 1/2 green onion stalk
  • A little cooking oil (for greasing the pan)

Tteokgalbi Seasoning

  • 1 Tbsp starch (e.g., potato or corn starch)
  • 1.5 Tbsp soy sauce
  • 0.5 Tbsp minced garlic
  • 1.5 Tbsp sugar
  • A pinch of salt
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare the vegetables and rice cakes that will add flavor and texture to your Tteokgalbi. Wash the carrot, peel it, and finely mince it. Do the same for the onion. Cut the rice cakes into small pieces, about 1cm in size, to provide a pleasant chewiness when mixed into the Tteokgalbi. Finely chop the green onion, using both the white and green parts.

In a large bowl, combine the fresh ground beef and ground pork. Add the finely minced carrot, onion, and green onion that you prepared earlier. Now, add all the seasoning ingredients: 1 Tbsp starch, 1.5 Tbsp soy sauce, 0.5 Tbsp minced garlic, 1.5 Tbsp sugar, a pinch of salt, and a pinch of black pepper. Mix everything together thoroughly with your hands, kneading until the mixture becomes sticky and well-combined. Once the mixture is properly kneaded, place it in a resealable plastic bag, press out any excess air, and refrigerate for about 1 hour. This chilling period allows the flavors to meld beautifully.

Remove the chilled mixture from the refrigerator. Add the chopped rice cakes to the meat mixture. Knead the mixture again until it becomes cohesive and the rice cakes are evenly distributed, ensuring a pleasant chewiness in every bite. Once the mixture is well-combined, take portions about the size of your fist. Gently shape them into flattened patties using your palms. It’s best to make them not too thick, so they cook through evenly.

Now it’s time to cook the delicious Tteokgalbi! Heat a generous amount of cooking oil in a frying pan over medium-high heat. Carefully place the shaped Tteokgalbi patties into the hot pan. Sear them over high heat for a short time on both sides until they are nicely browned and slightly crisp. This helps to seal in the juices. Once the exterior is golden brown, reduce the heat to medium. Continue to cook, either covered or uncovered, allowing the Tteokgalbi to cook through to the center.
