Gyeongju Gyori Kimbap, as famous as Hwangnam bread! Make Gyori Kimbap at home, featuring thinly fried egg crepes packed with flavor and texture. Following the authentic recipe, you’ll create a wonderful finger food perfect for special occasions.
Kimbap Ingredients- 10 sheets of kimbap seaweed
- 5 fresh eggs
- 2 cucumbers
- 2 fresh carrots
- 100g delicious braised burdock root
- 10 strips of crunchy pickled radish
- 100g firm fish cakes
- 5 pieces of premium imitation crab sticks
- 1 Tbsp fragrant sesame oil
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
The first step to delicious kimbap is perfectly cooked rice! Cook the rice so that each grain is distinct and fluffy. Using a rice cooker makes this process even easier and more delicious. Once the rice is cooked, transfer it to a large bowl.

Step 2
In the large bowl, add 1 Tbsp of fragrant sesame oil and 1 tsp of toasted sesame seeds to the rice. Gently mix to season the rice evenly, ensuring the grains don’t clump together.

Now, let’s prepare the kimbap fillings. Wash the cucumbers thoroughly under running water, then cut them into 8 wedges. Gently scoop out the seeds with a knife and lightly salt them to draw out excess moisture. Cut the imitation crab sticks and fish cakes lengthwise to match the width of the seaweed sheet. Slice the pickled radish to a suitable size for the kimbap. Finely julienne the carrots, stir-fry them in a little oil until translucent, and let them cool. Have your delicious store-bought braised burdock root ready.

Step 4
The key to Gyeongju Gyori Kimbap is the egg crepes! Whisk the 5 eggs thoroughly and cook them into thin crepes. Once cooled, slice these crepes into very fine julienne strips. The signature of Gyori Kimbap is using a generous amount of these egg strips, so don’t be shy!

Lay a sheet of kimbap seaweed on a bamboo mat. Spread a thin, even layer of the seasoned rice over the seaweed, being careful not to tear it. Now, arrange your prepared fillings in a line over the rice. Remember to add the egg julienne generously! Place the fillings on the rice and use the bamboo mat to roll the kimbap up tightly.
