Main Ingredients

  • 2 fresh squid
  • 6 sheets of special Gyeopchang Gim
  • 3 bowls of warm rice

Squid Salad Seasoning

  • 1 Tbsp gochujang (Korean chili paste)
  • 1/2 Tbsp fine gochugaru (Korean chili powder)
  • 1/3 Tbsp minced garlic
  • 1 Tbsp maesil-cheong (plum extract)
  • 1 Tbsp mirin (rice wine)
  • Pinch of ginger powder
  • Pinch of salt
  • 1 Tbsp vinegar
  • 1/2 Tbsp sugar
  • A sprinkle of toasted sesame seeds

Cooking Instructions

Let’s start with the star of Chungmu Gimbap: the spicy and sweet squid salad! First, clean the squid thoroughly. Blanch it briefly in boiling water. Be careful not to overcook, as it can become tough.

Now, let’s prepare the squid salad seasoning. In a bowl, combine gochujang (1 Tbsp), fine gochugaru (1/2 Tbsp), minced garlic (1/3 Tbsp), maesil-cheong (1 Tbsp), mirin (1 Tbsp), and a pinch of ginger powder and salt. Mix well. Finally, add vinegar (1 Tbsp) and sugar (1/2 Tbsp) to create a perfect sweet and sour balance.

Once blanched, let the squid cool slightly, then slice it into bite-sized pieces. Add the sliced squid to the prepared seasoning and gently mix until well coated. Sprinkle with toasted sesame seeds for extra aroma and flavor. Your delicious squid salad is ready!

Gyeopchang Gim is even more delicious when grilled, but here we’ll use it for our gimbap. Cut each sheet into 4 equal pieces. Season the warm rice with a pinch of salt and a drizzle of sesame oil for enhanced flavor. Place a portion of the seasoned rice onto a piece of gim and roll it up tightly, just like making regular gimbap. Adjust the amount of rice to your preference and ensure it’s rolled firmly.
