Easily make the famous Dongnae Pajeon from Busan’s Dongnae district right in your own kitchen. Fresh scallions and a variety of seafood come together to create a crispy exterior and a tender interior, offering a rich and flavorful experience. It’s perfect as a hearty meal or a special treat.
Essential Ingredients for Dongnae Pajeon
- 200g fresh scallions
- 80g mixed seafood (e.g., squid, shrimp, mussels)
- 50g Korean pancake mix (buchim garu)
- 40ml cold water
- Cooking oil (generous amount)
- 2 eggs
Cooking Instructions
Step 1
Prepare about 80g of mixed seafood. If using frozen seafood, ensure it’s fully thawed and pat dry with paper towels for better results. Using a variety of seafood will enhance the overall flavor.
Step 2
In a bowl, combine 50g of buchim garu with 40ml of cold water. Mix well until there are no lumps to create the batter. The batter should be slightly thick, not too watery. Using cold water helps achieve a crispier texture.
Step 3
Wash the fresh scallions thoroughly and pat them dry. You can use them whole, or for a more traditional Dongnae Pajeon style, cut them in half. Consider the size of your pan when deciding on the length.
Step 4
Heat a wide pan over medium-low heat and add a generous amount of cooking oil, ensuring it coats the entire surface. This is crucial for preventing sticking and achieving a golden-brown crust.
Step 5
Arrange the prepared scallions neatly in the hot pan. Pour the batter evenly over the scallions, making sure to cover them completely. Allow the batter to seep into the gaps between the scallions.
Step 6
Once the batter is poured, evenly distribute the mixed seafood over the top. Then, crack 2 eggs into a small bowl, whisk them lightly, and pour them over the seafood and scallions. The egg adds richness and a softer texture.
Step 7
Continue cooking over medium-low heat for about 5-7 minutes, or until the bottom side is golden brown and crispy. Once the bottom is cooked through and the edges are crisp, carefully flip the pajeon. Cook the other side until it’s also golden brown.
Step 8
Once both sides are beautifully golden brown, your Dongnae Pajeon is ready! Enjoy this visually appealing pancake, complete with seafood and egg, just like in the picture. Serve immediately while hot for the best taste experience.
