Ingredients- 150g well-fermented scallion kimchi
- 100g prepared eel (filleted or cut)
- 1/2 block firm tofu
- 2 Tbsp minced garlic
- 2 Korean green chilies (Cheongyang peppers)
- 1 red chili pepper
- 1/2 stalk scallion (green onion)

Step 1
Begin by preparing your vegetables for the stew. Slice the scallion (green onion) diagonally. Deseed the green and red chili peppers and slice them into rounds. Cut the firm tofu into bite-sized cubes, about 1.5 cm thick.

Rinse the prepared eel under cold running water. Lightly oil a frying pan and pan-fry the eel pieces until golden brown and slightly crispy. Pre-cooking the eel helps to eliminate any fishy odors and enhances its savory flavor.

In a heated pot, sauté the well-fermented scallion kimchi until it becomes slightly translucent and fragrant. Once the kimchi is sautéed, add rice water (the cloudy water from rinsing rice) to cover the kimchi. This liquid base adds a wonderful depth and smoothness to the stew.
