Basic Donggeurangttaeng Dough- 300g Ground Pork (Donminji)
- 1 block Tofu (approx. 300g)
- 1/3 stalk White part of Green Onion
- 1/4 Onion
- 2 Fresh Shiitake Mushrooms
- 2 Red Chili Peppers
- 3 Cheongyang Peppers (Spicy green chilies)
- 4 Eggs
- 1 cup Pancake Mix (Buchim Garu)
- Salt to taste
- Pepper to taste

Cooking Instructions
Step 1
First, prepare the vegetables that will enhance the flavor of your pancakes. Wash the shiitake mushrooms, Cheongyang peppers, red chili peppers, onion, and green onion thoroughly, pat them dry, and finely mince them. Finely chopping the vegetables ensures they mix well with the dough and contribute a pleasant texture.

For the shiitake mushrooms, gently remove the tough stem base to create a natural cavity for filling. For the chili peppers, slice them lengthwise in half and use a teaspoon to carefully scrape out the seeds. Select about 4 large, good-quality perilla leaves. You can trim the stems of the perilla leaves if desired.

Squeeze out excess water from the tofu using cheesecloth or paper towels, then mash it finely with your hands until there are no lumps. Removing this moisture prevents the dough from becoming too wet. Add the minced pork and all the chopped vegetables to the mashed tofu. Season lightly with salt and pepper. Finally, add the pancake mix and knead the ingredients together with your hands until everything is evenly combined.

Now, let’s shape the pancakes! For Donggeurangttaeng, take bite-sized portions of the dough and form them into round, flattened patties. Stuff the cavity of the shiitake mushrooms tightly with the Donggeurangttaeng mixture. Fill the hollowed-out chili peppers generously with the dough as well. For the perilla leaves, you can fold them in half with the filling inside, or place the filling in the center and fold them into a half-moon or triangle shape. Feel free to get creative with your shaping!

Lightly coat the shaped pancakes first with pancake mix on both sides. This helps the egg wash adhere better and results in a crispier texture when fried. Then, dip each coated pancake into the prepared egg wash, ensuring all sides are covered evenly.

Heat a generous amount of cooking oil in a pan over medium-low heat. Place the prepared pancakes one by one. Cooking slowly over low heat ensures the insides cook through without burning the exterior.
