Main Ingredients

  • 1/2 Zucchini (about 10cm long)
  • 1 block Firm Tofu (approx. 300g)
  • 2 King Oyster Mushrooms (or 1 if large)
  • Pink Sausage (to taste, about 1/2 to 1 link)

Batter & Seasoning

  • 1.5 cups Pancake Mix (approx. 150g)
  • 4-5 Eggs

Cooking Instructions

Step 1

Following along with the video will make it incredibly easy! ^^ (It’s also perfectly fine to just watch for visual pleasure.)

Step 2

1. **Slice the ingredients into bite-sized pieces:** Cut the zucchini into 0.5cm thick half-moons or lengthwise. Slice the tofu into 0.5-1cm thick pieces. Slice the king oyster mushrooms into 0.5cm thick rounds or lengthwise. Slice the pink sausage diagonally or into rounds, about 0.5cm thick. For a satisfying chew, it’s best not to slice the ingredients too thinly.

2. **Coat the ingredients with pancake mix:** Place the sliced zucchini, tofu, mushrooms, and sausage in a bowl. Sprinkle generously with pancake mix. Lightly shake or toss the ingredients to coat them thinly with the mix. This helps the egg wash adhere better and makes the pancakes crispier.

Step 4

3. **Dip in egg wash:** In a separate bowl, crack the eggs and beat them well, removing the chalazae (the white strings). Dip the pancake mix-coated ingredients into the beaten eggs, ensuring they are evenly coated on all sides. The egg wash will create a smooth coating around the ingredients.

Step 5

4. **Pan-fry until golden brown and serve!:** Heat a generous amount of cooking oil in a pan over medium-low heat. Carefully place the egg-coated ingredients in the preheated pan, ensuring they don’t overlap. Fry one side until golden brown, then flip and cook the other side until golden and cooked through. For ingredients like tofu or zucchini that take longer to cook, extend the frying time slightly. Once all pieces are beautifully golden, transfer them to a plate. Enjoy your delicious Modum Jeon while it’s warm, perhaps with a glass of Makgeolli!
