For the Curry and Tonkatsu- 4 pieces firm curry blocks (approx. 100-120g)
- 600ml water
- 150ml milk
- 1 onion (medium size)
- 1 Tbsp butter
- 1 Gome Tonkatsu Loin Cutlet
- 1 Gome Tonkatsu Mozzarella Cutlet
Cooking Instructions
Step 1
First, prepare the onion, which adds depth to the curry. Wash and peel one medium-sized onion, then slice it thinly. Thinly slicing the onion will help it caramelize beautifully and release its sweetness during cooking.
Step 2
Heat a wide pan over medium-low heat and melt 1 tablespoon of butter. Once the butter is melted, add the sliced onions and stir gently, cooking until the onions are golden brown and fragrant, releasing a sweet aroma. This process is called ‘caramelization’ and is key to developing a rich curry flavor. Be careful not to burn the onions by adjusting the heat, and sauté for about 10-15 minutes.
Step 3
Add 300ml of water to the caramelized onions and bring to a gentle boil. For a smoother curry base, use an immersion blender to purée the onions while hot. If you don’t have an immersion blender, let the mixture cool slightly and then transfer it to a regular blender to purée until smooth. This step is optional but significantly improves the curry’s texture.
Step 4
Now, let’s make the main curry sauce. In a pot, combine the remaining 300ml of water and 150ml of milk. Add the 4 blocks of firm curry and stir well. Simmer over low heat, stirring continuously to prevent lumps, until the curry reaches your desired consistency. Constant stirring is crucial to prevent sticking. Adding milk will make the curry richer and smoother.
Step 5
It’s time to cook the tonkatsu to perfection. Arrange the Gome Tonkatsu Loin Cutlet and Mozzarella Cutlet in your air fryer basket. Cook at 180°C (356°F) for approximately 15 minutes. Cooking times may vary by air fryer model, so check the cutlets to ensure they are golden brown and crispy.
Step 6
Generously ladle the warm, smooth curry over a serving of hot rice. Artfully arrange the golden-brown, crispy tonkatsu pieces on top – the loin cutlet and the mozzarella cutlet, cut into manageable portions.
