If you have too many nuts to just crack, why not make an aromatic and satisfying Ye-shik pie instead! We make this not only for the holiday but also frequently as a snack for the kids during regular days. Pie Dough and Filling Ingredients
  • 250g glutinous rice flour
  • 15 whole walnuts
  • 15 peeled chestnuts
  • 5 pitted and chopped dates
  • 1 tablespoon pine nuts
  • 50g dried raisins

Sweet & Savory Soy Sauce Mixture
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar (or white sugar)
  • 1 teaspoon sesame oil
  • 1 teaspoon vegetable oil (e.g., grapeseed oil)
  • 1 paper cup water (approx. 200ml)

Cooking Instructions

Step 1

First, let’s prepare the glutinous rice flour, which will form the hearty base of our Ye-shik pie. Using 250g of commercially available fine glutinous rice flour is convenient. Since the grains are fine, you don’t need to sift it; you can use it directly.

Step 2

Next, shall we make the delicious soy sauce mixture that will add flavor to the Ye-shik pie? In one paper cup of water (about 200ml), combine 3 tablespoons of soy sauce, 2 tablespoons of brown sugar (adjust sweetness to your preference), 1 teaspoon of nutty sesame oil, and 1 teaspoon of vegetable oil for a smoother texture. Stir well until the sugar is dissolved.

Step 3

Now, let’s prepare the assorted nuts and dried fruits for the pie. Roughly chop the whole walnuts into bite-sized pieces. Slice the peeled chestnuts into similar sizes. For the pitted dates, roll them up and slice thinly, or chop them finely. The pine nuts and dried raisins can be kept whole.

Step 4

It’s time to mix the dough! Pour the prepared soy sauce mixture over the glutinous rice flour. Knead thoroughly with a spatula or your hands until the glutinous rice flour has fully absorbed the sauce, creating a cohesive dough. Once the dough is smooth and clumped together, add all the prepared walnuts, chestnuts, dates, raisins, and pine nuts. Mix well so that the nuts are evenly distributed throughout the dough. This ensures you get a variety of textures and flavors with every bite.

Step 5

Now, let’s prepare the pie pan and bake. Lightly grease the inside of a tart pan or pie dish with vegetable oil. Press the dough evenly into the pan, leveling the top surface. Bake in a preheated oven at 180°C (350°F) for about 40 minutes, or until golden brown. Baking time may vary depending on your oven, so check for doneness by inserting a skewer; it should come out clean when the pie is ready.

Step 6

Once baked to a beautiful golden brown, carefully remove the Ye-shik pie from the oven and place it on a wire rack to cool slightly. Letting it cool completely before removing it from the pan will ensure it comes out cleanly without breaking. While delicious when warm, the chewy texture becomes even more pronounced when it’s fully cooled and sliced.
