Main Ingredients

  • 1 bowl of prepared sea grapes (gamtae), roughly chopped
  • 2 Korean chili peppers (gochu), deseeded and finely minced
  • 1 red chili pepper, deseeded and finely minced
  • 1/2 carrot, thinly julienned
  • 1/2 bunch of scallions (jjokpa), finely chopped

Seasoning Ingredients

  • 2 Tbsp fish sauce (e.g., anchovy or sand lance)
  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp minced garlic
  • 1 Tbsp plum extract (maesil-cheong)
  • 1 Tbsp sesame oil
  • Sesame seeds, to taste

Cooking Instructions

Step 1

Gamtae is usually sold prepared, but if you find any tangled parts, gently untangle them. Washing gamtae with water can diminish its unique aroma, so it’s best to rinse it very lightly under running water or simply shake it to clean. Cooking it as is will best preserve its deep fragrance and flavor.

In a bowl with the prepared gamtae, add 2 Tbsp fish sauce, 1 Tbsp soy sauce for soup, 1 Tbsp plum extract, and 1 Tbsp minced garlic. Gently mix and massage the ingredients together with your hands. It’s important to handle the gamtae delicately to prevent it from becoming mushy.

Add the finely minced Korean chili peppers and red chili pepper for color, the chopped scallions, and the julienned carrot to the seasoned gamtae.

Finally, add 1 Tbsp sesame oil for a nutty aroma and a sprinkle of sesame seeds. Gently mix again to combine all the ingredients evenly. Taste and add more fish sauce or soy sauce if needed.
