Elevate Your Meat Feast with a Delicious Wild Chive and Scallion Salad
Tired of the same old scallion salad? Try adding wild chives for a delightful twist! This simple yet flavorful salad, featuring the fresh aroma of wild chives and the crisp texture of scallions, pairs perfectly with any grilled meat. It’s a wonderful way to add a touch of spring to your table.
Ingredients
- 1 bunch fresh wild chives (dallae)
- 1 bunch thinly sliced scallions (paechae)
- 2 Tbsp gochugaru (Korean red pepper flakes)
- 1 Tbsp sugar
- 4 Tbsp vinegar
- 1 Tbsp perilla oil (deulgireum)
- 1 Tbsp sesame seeds
- 1 Tbsp soy sauce (jin-ganjang)
Cooking Instructions
Step 1
First, gently wash the fresh wild chives (dallae). Rinse them thoroughly under cold running water, paying attention to the roots to remove any dirt. Shake off excess water and set aside.
Step 2
You can often get thinly sliced scallions (paechae) as a complimentary side when buying pork belly, or easily purchase a pre-packaged bunch from the grocery store. One pack is usually a good amount.
Step 3
If your scallions are long, trim them into bite-sized pieces (about 2-3 inches). Give them a quick rinse and drain them well to maintain their crispness.
Step 4
Finely chop the washed wild chives into roughly 1-inch segments. Avoid chopping them too small, as this will help retain their texture and aromatic flavor.
Step 5
Now, let’s prepare the delicious seasoning. In a medium-sized mixing bowl, add 2 tablespoons of gochugaru (Korean red pepper flakes). This will provide a vibrant color and a pleasant spiciness.
Step 6
Add 1 tablespoon of sugar to the bowl for a touch of sweetness. You can adjust the sugar to your preference.
Step 7
Next, pour in 4 tablespoons of vinegar. The vinegar adds a refreshing tanginess that balances the richness of the other ingredients and cuts through any fattiness from meat.
Step 8
Add 1 tablespoon of soy sauce (jin-ganjang) to enhance the overall umami flavor and bring everything together harmoniously.
Step 9
Finally, drizzle in 1 tablespoon of perilla oil (deulgireum) for its rich, nutty aroma. This oil adds a wonderfully deep flavor that complements both the wild chives and scallions.
Step 10
Sprinkle 1 tablespoon of sesame seeds generously over the seasoning. Now, add the prepared wild chives and scallions to the bowl. Gently toss everything together until well combined. Be careful not to over-mix, as this can make the scallions soggy.
Step 11
Toss the salad until all the ingredients are evenly coated with the dressing. Transfer to a serving plate. Enjoy the delightful combination of aromatic wild chives and crisp scallions! This salad is especially wonderful served alongside grilled meats, as it cleanses the palate and adds a burst of fresh flavor.
