Wild Chive and Salmon Rolls (Serves 1)

  • 1/2 bowl cooked rice
  • 1 sheet of seaweed (nori)
  • Smoked salmon, to taste
  • 1 handful fresh wild chives (washed and trimmed)
  • Capers, to taste (drained)

Sushi Vinegar for Rice

  • 2 Tbsp rice vinegar
  • 1 tsp sugar
  • Pinch of salt

Mustard Sauce for Rolls

  • 2 Tbsp mustard
  • Pinch of Japanese mustard (karashi)
  • 1 tsp whole grain mustard

Tartar Sauce for Garnish

  • 3 Tbsp mayonnaise
  • Finely minced onion, to taste
  • Finely minced wild chives, to taste
  • Pinch of lemon juice
  • Pinch of black pepper
  • Pinch of honey

Cream Cheese Sauce for Canapés and Rolls

  • 5 Tbsp cream cheese
  • Finely minced wild chives, to taste
  • Finely minced onion, to taste
  • 1 tsp lemon juice
  • Pinch of black pepper
  • Pinch of honey

Wild Chive Canapé Ingredients

  • Finely minced wild chives, to taste
  • 11 capers
  • 6 slices smoked salmon
  • 5 large shrimp
  • About 11 crackers
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

Begin by preparing your fresh ingredients! Wash the wild chives thoroughly and trim them. Prepare the smoked salmon and capers for easy use. Finely mince the onion.

Once your rice is cooked and still warm, let’s make the sushi vinegar to give it a lovely sheen and flavor. In a small bowl, combine 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and a pinch of salt. Stir until the sugar and salt are completely dissolved.

Let’s create a smooth and creamy cheese sauce. In a bowl, place 5 tablespoons of cream cheese. Add a small amount of finely minced wild chives and onion. Season with a pinch of black pepper, 1 teaspoon of lemon juice, and a touch of honey. Mix everything together until well combined and creamy.

Transfer the prepared cream cheese mixture into a piping bag. This will allow for neat and decorative piping of the sauce onto your rolls and canapés. If you don’t have a piping bag, a spoon or chopsticks can also be used.

Gently pour the prepared sushi vinegar over the warm rice. Using a spatula or rice paddle, carefully mix the vinegar into the rice, being careful not to mash the grains. This will give the rice a beautiful gloss and delicious flavor. For an extra touch of flavor and texture, sprinkle in some black sesame seeds if desired.

Now, let’s make a zesty tartar sauce to accompany the rolls. In a bowl, combine 3 tablespoons of mayonnaise with a small amount of finely minced onion and wild chives. Add a pinch of lemon juice, a pinch of black pepper, and a touch of honey. Stir well to combine all the ingredients. (You don’t need boiled eggs to make a delicious tartar sauce!)

To add a delightful kick to your rolls, prepare the mustard sauce. In a small bowl, mix together 2 tablespoons of mustard, a pinch of Japanese mustard (karashi), and 1 teaspoon of whole grain mustard. This will create a wonderfully pungent and flavorful sauce.

Place the nori sheet on a bamboo sushi mat. Spread the seasoned sushi rice evenly over about two-thirds of the nori, leaving a small border at the top. Ensure the rice is not too thick, or the roll might break when you try to form it.

It’s time to roll! Arrange slices of smoked salmon lengthwise over the rice. Pipe the cream cheese sauce from step 3 over the salmon. Generously add the fresh wild chives, and then drizzle a little of the mustard sauce. Using the bamboo mat, lift the edge of the mat and roll the sushi tightly, pressing gently to form a neat log.

Carefully slice the rolled sushi into bite-sized pieces (about 2 cm thick), lightly wetting your knife to prevent sticking. Arrange the slices on a serving plate, top with a dollop of tartar sauce, and garnish with a few capers. Your beautiful Wild Chive and Salmon Rolls are ready!
