  • Green onion 1/3 stalk
  • Canned ham 60g
  • Cooking oil 2 Tbsp
  • Soy sauce 2 Tbsp
  • Cooked rice 220g (warm)
  • Sesame oil 0.5 Tbsp

First, carefully clean the spring wild chives. Remove any dirt or debris, and gently separate the fragrant leaves from the stems.

Finely chop both the separated leaves and stems of the wild chives. It’s important to preserve their fresh, aromatic scent as much as possible.

Thinly slice the green onion. The fresh aroma of the green onion will enhance the umami flavor of the fried rice.

Dice the canned ham into small, uniform cubes. This ensures even cooking and a pleasant texture when stir-fried.

Now, let’s start stir-frying. Heat 2 Tbsp of cooking oil in a pan over high heat. Add the sliced green onion and diced ham, and stir-fry until fragrant. Cook until the refreshing scent of the green onion and the savory flavor of the ham are well combined.

Once the ham is lightly browned, add the chopped wild chive stems. Stir-fry quickly over high heat. Avoid overcooking the stems, as they can become tough; a brief stir-fry will keep them pleasantly crisp.

This is key to the flavor! Pour 2 Tbsp of soy sauce along the edge of the pan and stir-fry rapidly over high heat to deepen the taste. The soy sauce will caramelize slightly, adding a rich flavor.
