  • 2 handfuls of aromatic spring nettles (cleaned and prepared)
  • 1.2L of savory rice water
  • 2 Tbsp soybean paste (Doenjang)
  • 1/2 Tbsp gochujang (Korean chili paste) for added umami
  • 1 Tbsp minced garlic
  • A little chopped green onion (for garnish)

Since the aroma is key, rinse the nettles thoroughly under running water to remove any dirt or debris. Make sure to clean the roots well, remove any wilted leaves, and lightly drain them.

Prepare the rice water by using the milky water left after cooking rice. The natural savoriness of the rice water will make the doenjangguk taste even richer and smoother. Prepare about 1.2 liters.

Pour the rice water into a pot and begin heating over medium heat. Before the water boils, dissolve the soybean paste. To prevent clumping, it’s best to first dissolve the soybean paste in a little lukewarm water before mixing it into the rice water.

Add 1/2 Tbsp of gochujang along with the soybean paste for an extra layer of flavor. Gochujang will give the soup a more appetizing color and a richer taste.

Once the soybean paste and gochujang are well dissolved and the rice water starts to boil, add the prepared nettles. Avoid overcooking the nettles, as this can diminish their fresh aroma. Cook just until they become tender.
