Main Ingredients

  • 10 roots Fresh Nacoi (Korean wild chive)
  • 1 handful Minced Pork (approx. 50-70g)
  • 1 pack Enoki Mushrooms (150g)
  • 1.5 blocks Firm Tofu for frying (approx. 270g)
  • 10 Tbsp Pancake Mix (approx. 100g)
  • 2 Eggs
  • Salt (approx. 1/2 tsp, or to taste)
  • Black Pepper (a pinch, to taste)

Cooking Instructions

Step 1

First, thoroughly clean the nacoi to enhance its aromatic flavor. Wash it under running water, including the roots, to remove any soil. Trim off any wilted leaves or tough root parts.

Finely chop the cleaned nacoi into small pieces, about 0.5cm in size. This ensures that the herb’s fragrance and texture are evenly distributed throughout the pancake for a more delicious result.

In a large bowl, combine the minced pork, enoki mushrooms (either torn or sliced), and the mashed firm tofu.

Add 10 tablespoons of pancake mix and 2 eggs to the bowl. Season with a pinch of salt and black pepper. (It’s best to start with less seasoning and adjust later according to your taste. If it doesn’t seem salty enough, add a little more salt to the batter.)

Gently mix all the ingredients in the bowl with your hands until just combined. Avoid overmixing, as this can make the pancake tough. Mix only until the ingredients are evenly distributed.

Heat a frying pan over medium-low heat with a generous amount of cooking oil. Spoon portions of the batter onto the pan, shaping them into small, flat rounds. Cooking over medium-low heat ensures the pancakes cook through evenly without burning.
