Ingredients- Wild garlic (dal-rae) 1/2 bundle
- Aged kimchi (muk-eunji) 2 rows
- Thin wheat noodles (somyeon) 2 handfuls
Aged Kimchi Seasoning- Perilla oil (deul-gireum) 1 Tbsp
- Sugar 1/2 Tbsp
- Sesame seeds (roasted and crushed) 1/2 Tbsp
Noodle Seasoning- Soy sauce 3 Tbsp
- Sugar 1 Tbsp
- Perilla oil (deul-gireum) 2 Tbsp
- Sesame seeds (roasted and crushed) 1 Tbsp
- Perilla oil (deul-gireum) 1 Tbsp
- Sugar 1/2 Tbsp
- Sesame seeds (roasted and crushed) 1/2 Tbsp
Noodle Seasoning- Soy sauce 3 Tbsp
- Sugar 1 Tbsp
- Perilla oil (deul-gireum) 2 Tbsp
- Sesame seeds (roasted and crushed) 1 Tbsp
Cooking Instructions
Step 1
How to clean wild garlic: Gently place the wild garlic in running water and carefully rinse it multiple times, including the root part, to remove any dirt or debris.
Step 2
After washing, place the wild garlic on a colander and let it drain thoroughly. Proper draining prevents the sauce from becoming watery.
Step 3
Once drained, cut the wild garlic into approximately 3cm lengths for easy eating.
Step 4
Rinse the two rows of aged kimchi lightly under running water to remove some of the sourness, then finely chop them.
Step 5
Squeeze out the excess water from the chopped aged kimchi by hand. Removing moisture ensures the seasoning adheres well.

Add 1 Tbsp of perilla oil to the squeezed aged kimchi,

and 1/2 Tbsp of sugar.

Add 1/2 Tbsp of crushed sesame seeds and gently mix by hand to coat the kimchi evenly with the seasoning.

How to boil noodles: Bring a large pot of water to a rolling boil. Once boiling, gently spread the somyeon noodles into the water to prevent them from clumping.
Step 10
Stir the noodles gently with chopsticks to separate them as they cook. Let them boil until the water is just about to overflow.
Step 11
As the water begins to overflow, add 1 cup of cold water to reduce the temperature. Repeat this step twice more (boiling a total of three times).
Step 12
Once the noodles are cooked, rinse them thoroughly under cold running water 2-3 times to remove starch and achieve a firm, chewy texture. Drain completely in a colander.
Step 13
Arrange the prepared wild garlic neatly on top of the drained somyeon noodles.

Soy sauce noodle seasoning: In a bowl, combine 3 Tbsp of soy sauce,

and 1 Tbsp of sugar.

Add 2 Tbsp of perilla oil for added aroma and flavor,

and 1 Tbsp of crushed sesame seeds. Mix well to create the delicious soy sauce seasoning. Drizzle this sauce over the noodles.

Place the seasoned aged kimchi at the bottom of the serving bowl.

Top with the prepared wild garlic seasoned noodles for a beautiful presentation. You can add more sauce if desired.
