- 1/4 onion

- 3 stalks green onion
- 40g carrot (approx. 1/5 of a medium carrot)
Stir-fry Seasoning & Condiments
- 2 Tbsp cooking oil
- 2/3 Tbsp minced garlic (approx. 10g)
- 1/2 Tbsp soy sauce
- 1 Tbsp oyster sauce (the key to umami!)
- 1 Tbsp cooking wine (like mirin)
- 1/3 Tbsp corn syrup or honey (for a glossy finish)
- 1 Tbsp sesame oil
- 1/3 Tbsp toasted sesame seeds (for nutty flavor!)

- 2/3 Tbsp minced garlic (approx. 10g)
- 1/2 Tbsp soy sauce
- 1 Tbsp oyster sauce (the key to umami!)

Cooking Instructions
Step 1
First, separate the stems from the shiitake mushroom caps, as we’ll only be using the caps for cooking. You can save the stems for making broth or mince them finely to add to the sauce. Slice the mushroom caps into about 0.5cm thick pieces for easy eating.

Prepare the vegetables for stir-frying. Thinly slice the onion. Cut the mini bell peppers into strips of similar length to the onion. Carrots are firm, so slice them into thin matchsticks. Lastly, cut the green onions to match the length of the other vegetables.

Now, let’s stir-fry! Heat a pan over medium heat and add 2 Tbsp of cooking oil. Add 2/3 Tbsp of minced garlic and stir-fry gently over low heat until fragrant. Be careful not to burn the garlic. Once the garlic aroma intensifies, add the green onions first and stir-fry briefly to release their flavor. Then, add the sliced onion, carrot, and bell pepper and stir-fry for 2-3 minutes until the vegetables become slightly translucent.
Step 4
Once the vegetables are partially cooked, add the sliced shiitake mushrooms to the pan. Stir-fry them together. The mushrooms will release some moisture, which will naturally blend with the other ingredients.

When the ingredients have softened slightly, it’s time to add all the seasoning. Pour in 1/2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp cooking wine, and 1/3 Tbsp corn syrup or honey. Stir well and continue to stir-fry for another 2-3 minutes. The umami from the oyster sauce and the gloss from the syrup will make the dish look even more appealing.
Step 6
Once all ingredients are cooked through and have absorbed the sauce, turn off the heat. Finally, stir in 1 Tbsp of sesame oil and 1/3 Tbsp of toasted sesame seeds for a nutty aroma.
