How to Make Chewy and Fragrant Shiitake Mushroom Rice in an Electric Pressure Cooker
This delicious shiitake mushroom rice is made easily and quickly in an electric pressure cooker, packed with the rich flavor of shiitake mushrooms. The rice will be so good, you’ll finish it all in one sitting!
Main Ingredients- Rice for 3 servings (approx. 2.5 cups)
- 5 Shiitake mushrooms (fresh or rehydrated dried shiitake)
Cooking Instructions
Step 1
First, wash the rice thoroughly. Soaking the rice in water for about 30 to 40 minutes will result in chewier and more delicious grains. Drain the soaked rice in a sieve to remove excess water.

If using fresh shiitake mushrooms, those dried naturally for a day will have a more intense aroma. Clean them, remove the tough stems, and slice them thinly or chop them into small pieces so they mix well with the rice. (If using dried shiitake mushrooms, rehydrate them sufficiently in lukewarm water before using.)

Add the drained soaked rice to the inner pot of your electric pressure cooker.

Evenly spread the prepared shiitake mushrooms over the rice. Use about 10-15% less water than you normally would for plain white rice; this will help the shiitake mushrooms retain their flavor and texture, resulting in fluffy, distinct grains. Cook using the ‘White Rice’ function on your electric pressure cooker.
Step 5
Once the cooking cycle is complete, the rice will be ready in about 27 minutes, including the steaming time. Allowing sufficient steaming time will make the rice grains even softer.
