Main Ingredients- 1/2 bunch fresh wild chives (chamnamul)
- A splash of vinegar (for washing)
Seasoning Ingredients- 1 Tbsp soy sauce
- 1.5 Tbsp fish sauce (for umami boost!)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar (adjust to taste)
- 0.5 Tbsp vinegar (for tanginess boost!)
- 1 Tbsp sesame oil (for nutty aroma boost!)
- A pinch of toasted sesame seeds (for garnish)
- 1 Tbsp soy sauce
- 1.5 Tbsp fish sauce (for umami boost!)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar (adjust to taste)
- 0.5 Tbsp vinegar (for tanginess boost!)
- 1 Tbsp sesame oil (for nutty aroma boost!)
- A pinch of toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
Thorough washing is key! First, fill a bowl with plenty of water and add a few drops of vinegar. Submerge the prepared wild chives for about 5 minutes to effectively remove any pesticides or impurities. (Since wild chives are eaten raw, it’s important to wash them meticulously.)
Step 2
Remove the wild chives from the vinegar-water bath and rinse them thoroughly under cold running water a couple of times. Gently pat them dry. Cut the fresh wild chives into bite-sized pieces, about 4-5 cm long. Cutting them too long might make them difficult to eat, so aim for a manageable size.
Step 3
Let’s make the delicious seasoning! In a bowl, combine 1 Tbsp soy sauce, 1.5 Tbsp fish sauce, 2 Tbsp gochugaru, 1 Tbsp sugar, 0.5 Tbsp vinegar, and 1 Tbsp sesame oil. Mix them well. Finally, add a pinch of toasted sesame seeds. (Feel free to adjust the amount of sugar and vinegar to balance the sweet and sour flavors according to your preference.)
Step 4
Add the prepared seasoning to the cut wild chives. Gently toss the ingredients with your hands, being careful not to mash the chives. The trick is to mix them softly so the seasoning coats everything evenly. Your aromatic and delicious seasoned wild chives salad is now ready! Serve it immediately on a plate and enjoy its freshness.
