  • 1 stalk of green onion (scallion), focusing on the white parts if possible
  • 3 Tbsp cooking oil
  • 1.5 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 0.5 Tbsp sugar

Cooking Instructions

First, prepare your ramen noodles. You can use regular instant ramen noodles, or for a chewier texture, try fresh noodles or Chinese-style noodles.

Wash the fresh green onion thoroughly. Trim off the outer leaves and prepare the stalk. Slice it lengthwise in half.

Cut the halved green onion into pieces about 4-5 cm (approximately 1.5-2 inches) long. This size will help release more flavor when stir-fried and make them easier to eat.

Bring a pot of water to a boil, then add the ramen noodles. Cook them until they are about 70% done. Be careful not to overcook, as they will continue to cook in the pan. Drain the noodles and rinse them under cold water to stop the cooking and remove excess starch. Set aside.

Heat a pan over high heat. Add the cooking oil and all the chopped green onions. Stir-fry them vigorously until the green onions soften, turn slightly golden, and release their aromatic oils. This step is crucial for developing the deep scallion flavor.

Once you can smell the fragrant scallion oil, add the soy sauce, oyster sauce, and sugar to the pan. Stir quickly to combine them with the scallions and oil, cooking for about 1 minute until the sauce slightly thickens and coats the scallions.
