Main Ingredients- 2 medium-sized potatoes
- 5g fresh rosemary (or 1 tsp dried rosemary)
- 1 pinch of salt
- 3 Tbsp olive oil
Cooking Instructions
Step 1
First, peel the potatoes thoroughly. Washing them under running water to ensure no soil remains will make them even better.

Cut the peeled potatoes into bite-sized pieces. If they are too small, they might fall apart when roasted, so cutting them into pieces about 2-3 cm (about 1 inch) is recommended.

Carefully pluck the leaves from the fresh rosemary sprigs. If using dried rosemary, lightly rub it between your hands to enhance its fragrance before adding.

Bring a pot of water to a boil, add a pinch of salt, and then add the cut potatoes. Parboil the potatoes for about 5-7 minutes, until they are about 50% cooked. This step helps ensure the potatoes become wonderfully tender when roasted.

Drain the parboiled potatoes completely using a colander and place them in a large bowl.

Add salt, olive oil, and the prepared rosemary leaves to the bowl with the potatoes. Toss everything together to coat evenly. Let the potatoes marinate for about 30 minutes; this allows the flavors of rosemary and olive oil to fully infuse into the potatoes, making them exceptionally delicious.

Heat a frying pan over medium heat, add the marinated potatoes, and roast until golden brown and crispy. Flip them occasionally to ensure even cooking. Roast until the exterior is nicely browned and the insides are fully cooked. Alternatively, you can bake them in a preheated oven at 200°C (400°F) for 20-25 minutes.
