- 1 Tbsp Maesilcheong (Plum extract)
- 1/2 Tbsp Sugar (adjust sweetness)
- 1 Tbsp Minced garlic
- 4 Tbsp Water
- Sesame seeds, a pinch
- 2 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp Soy sauce (Gukganjang or Jin-ganjang)
- 1 Tbsp Fish sauce (Anchovy type)
- 1 Tbsp Maesilcheong (Plum extract)
- 1/2 Tbsp Sugar (adjust sweetness)
- 1 Tbsp Minced garlic
- 4 Tbsp Water
- Sesame seeds, a pinch
Cooking Instructions
Step 1
First, prepare the vegetables. Peel the onion and carrot, then julienne them as thinly as possible. Slice the scallion thinly on an angle, using both white and green parts. Similarly, thinly slice the Korean chili peppers on an angle. If you prefer a spicier taste, increase the amount of chili peppers.
Step 2
It’s important to wash the perilla leaves thoroughly since they’ll be eaten with rice. Soak the perilla leaves in cold water to soften them, then rinse each leaf individually under running water, making sure to spread them out to clean effectively. Wash them meticulously to remove any dirt or debris. Afterward, drain them well on a colander, ensuring most of the water is removed.
Step 3
Now, let’s make the delicious seasoning! In a bowl, combine the gochugaru, soy sauce, fish sauce, maesilcheong, sugar, minced garlic, and water. Stir well with a spoon until the sugar and garlic are fully dissolved and the mixture is smooth. Adding water helps the seasoning achieve a good consistency that spreads easily on the perilla leaves.
Step 4
Add the julienned onion and carrot, along with the sliced scallions and chili peppers, to the well-mixed seasoning. The addition of fresh vegetables will add a wonderful texture and enhance the overall flavor of the perilla leaf salad.
Step 5
It’s time to coat the perilla leaves with the seasoning. Take each clean and drained perilla leaf, lay it flat, and spread a thin layer of the prepared seasoning onto one side. For a more even flavor, try to spread the seasoning on both the front and back of each leaf.
Step 6
Layer the seasoned perilla leaves in stacks of 3-4. Arranging them neatly and placing them in the refrigerator allows the flavors to meld and the seasoning to gently permeate the leaves. While it’s delicious immediately, letting it rest in the fridge for at least 30 minutes will significantly enhance its depth of flavor.
Step 7
Voilà! Your aromatic perilla leaf salad is ready! It’s wonderful served on top of rice, used as a wrap, or simply enjoyed as a side dish. If you’ve lost your appetite, this dish will help you finish a bowl of rice in no time. Enjoy your meal!
