Aromatic Perilla Leaf and Perilla Seed Powder Seasoned Bean Sprouts

Main Ingredients- 300g bean sprouts
- 2-3 perilla leaves
- 1 Tbsp perilla seed powder
- 3cm white part of green onion
Seasoning Ingredients- 1/3 tsp salt
- 1 tsp fish sauce (or 1-2 Tbsp sugar)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/2 Tbsp minced garlic
- 1/3 tsp salt

Cooking Instructions
Step 1
First, carefully remove the stems from the perilla leaves to maintain their freshness. Then, thinly slice them into strips about 0.5cm wide. The aromatic flavor of the perilla leaves will blend beautifully with the bean sprouts.
Step 2
Place the washed bean sprouts in a pan. Add 1/3 tsp salt, 1 tsp fish sauce (or adjust sweetness with 1-2 Tbsp sugar), 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds, and 1/2 Tbsp minced garlic. Turn the heat to high. Stir-fry uncovered for 3-4 minutes until the bean sprouts are crisp-tender. It’s important not to overcook them, so they retain their crunch.
Step 3
After stir-frying, don’t season the bean sprouts immediately. Transfer them to a spacious bowl and let them cool down completely. Seasoning while they are still warm can sometimes impart a raw flavor, so it’s best to wait until they have reached room temperature.
Step 4
Now it’s time to bring everything together for the final seasoning. In the bowl with the cooled bean sprouts, add the thinly sliced perilla leaves, 1 Tbsp of nutty perilla seed powder, and the finely chopped green onion (using only the white part). Gently mix everything together with your hands until well combined.
