Passion fruits, also known as ‘Baekhyang-gwa’ in Korea, are now even cultivated domestically and offer a unique culinary experience. This recipe will guide you through creating a vibrant passion fruit syrup that’s both beautiful and delicious. After making the syrup, allowing it to mature for about a week in the refrigerator will enhance the subtle fragrance and flavor from the peels, resulting in a deeper, more complex taste. I couldn’t wait and enjoyed mine chilled after just one day! Use this wonderful passion fruit syrup to create a variety of refreshing drinks and dishes.
Ingredients- 300g Fresh Passion Fruits (select ripe ones)
- 300g Granulated Sugar or Brown Sugar (equal weight to the passion fruit)
Cooking Instructions
Step 1
Thoroughly wash the fresh passion fruits under running water multiple times. This step is crucial for removing any dirt or debris from the peel’s surface, especially since we’ll be using the peel.
Step 2
Cut the washed passion fruits in half and separate the pulp from the peels. You can use a spoon to easily scoop out the pulp. Set the pulp aside and keep the peels ready for the next step.
Step 3
Slice the reserved passion fruit peels into your desired shape and size. Thin julienne strips or small cubes are both excellent options. Feel free to cut them according to your preference, considering the peel’s texture.
Step 4
Combine the sliced passion fruit peels, the reserved pulp, and the sugar in a bowl. Mix everything thoroughly until well combined. Ensure the sugar is evenly distributed with the fruit. Transfer this mixture into a clean, sterilized glass jar.
