Fresh Ddaeraesoon Namul Muchim
This recipe introduces Ddaeraesoon Namul Muchim, a delightful mountain green salad made with fresh Ddaeraesoon. Lightly blanched and tossed with minimal seasonings, this dish perfectly preserves the subtle, unique aroma and fresh taste of Ddaeraesoon. Main Ingredients- 200g Ddaeraesoon (mountain greens)
- A pinch of coarse salt (for blanching)
Seasoning- 2/3 Tbsp soup soy sauce or regular soy sauce
- 2/3 Tbsp brewed soy sauce
- 1 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds
- 2/3 Tbsp soup soy sauce or regular soy sauce
- 2/3 Tbsp brewed soy sauce
- 1 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare the fresh Ddaeraesoon. (The photo shows Ddaeraesoon Namul.)
Step 2
Fill a pot with plenty of water and bring it to a rolling boil. Add a pinch of coarse salt to the boiling water. Gently place the Ddaeraesoon into the boiling water and blanch for a very short time, about 30 to 40 seconds. Be careful not to over-blanch, as this can make the greens mushy.
Step 3
Immediately rinse the blanched Ddaeraesoon under cold running water to cool it down completely. Once cooled, gently squeeze out as much water as possible by hand. Properly squeezing out the water prevents the namul from becoming watery and allows it to absorb the seasoning well.
Step 4
In a bowl, combine the soup soy sauce (or regular soy sauce), brewed soy sauce, nutty perilla oil, and toasted sesame seeds. Mix these ingredients well to create the seasoning dressing. Feel free to adjust the types or amounts of soy sauce to your preference.
Step 5
Add the squeezed Ddaeraesoon to the prepared dressing. Gently toss the greens with your hands, mixing them with the seasoning. Be careful not to mash the greens; toss them gently to coat evenly.
Step 6
Transfer the well-seasoned Ddaeraesoon namul, which has absorbed the flavors beautifully, to a serving dish. Arrange it nicely to complete the dish.
