Mocha Castella Cake Ingredients

  • Hotcake mix 200g
  • Coffee milk 150ml
  • 1 fresh egg
  • Instant coffee powder 6g (adjustable to taste)
  • Sliced almonds, for topping (optional)

Next, crack one fresh egg into a mixing bowl. It’s best if the egg is at room temperature, as it will incorporate more smoothly with the other ingredients.

Pour the prepared coffee milk mixture into the bowl with the beaten egg. Whisk gently until the egg and coffee milk are well combined into a smooth liquid. Avoid overmixing at this stage.

Now, sift the hotcake mix (200g) into the wet ingredients. Sifting prevents lumps and results in a lighter, more tender cake texture. Use a spatula or whisk to gently fold the dry ingredients into the wet until just combined. Be careful not to overmix, as this can make the castella tough.

Finally, add the sliced almonds to the batter for a delightful crunch and nutty flavor. You can also add raisins or chocolate chips at this stage if you desire extra texture and sweetness.
