Ingredients for Minari Bibimbap
  • 2 bowls of cooked rice
  • Generous amount of fresh minari (for seasoning)
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 eggs (for frying)
  • 2 Tbsp sesame oil
  • Plenty of sesame seeds

Cooking Instructions

Step 1

First, wash the minari thoroughly and drain excess water. Cut it into bite-sized pieces, about 3-4 cm long. Place the cut minari in a large bowl. Add 1 Tbsp of gochujang, 1 Tbsp of sesame oil, and a pinch of sesame seeds. Gently mix everything together. Be careful not to overmix, as this can make the minari mushy. Add the remaining 1 Tbsp of gochujang and 1 Tbsp of sesame oil to enhance the flavor, and finally, sprinkle generously with sesame seeds to complete the fragrant minari seasoning.

Step 2

Next, fry the eggs in a pan with a little oil. Cook them to your preference, either sunny-side up (half-cooked yolk) or fully cooked. A sunny-side up egg with a runny yolk adds richness and creaminess to the bibimbap.

Now, prepare a large bowl to assemble the bibimbap. Add 2 generous bowls of warm cooked rice to the bowl. If the rice is too hot, the other ingredients might cook prematurely, so letting out a little steam beforehand can be helpful.

Arrange the freshly seasoned minari generously over the rice. The vibrant green minari, embodying the freshness of spring, will beautifully top the rice.
