Cookie Dough Ingredients

  • 100g Butter, softened to room temperature
  • 150g Powdered sugar, sifted
  • 1g Salt (a pinch)
  • 20g Egg, lightly beaten
  • 150g Cake flour, sifted
  • 15g Matcha powder, sifted
  • 2g Vanilla extract (optional, for enhanced flavor)

Cooking Instructions

Step 1

First, place the softened butter, which has been left at room temperature until pliable, into a bowl. Cream the butter until it becomes smooth and fluffy, similar to soft whipped cream.

Step 2

Add the sifted powdered sugar and salt to the creamed butter. Continue to whip until well combined, forming a smooth, creamy mixture. Be careful not to over-whip, as this can result in hard cookies.

Step 3

Gradually add the beaten egg in 2-3 portions, mixing thoroughly after each addition to ensure it’s fully incorporated and the mixture doesn’t separate. Adding all the egg at once can cause the dough to curdle, so divide it as instructed.

Step 4

Add the sifted cake flour and matcha powder to the bowl. Using a spatula, gently fold the ingredients together as if cutting through them. Mix just until no dry streaks of flour remain to ensure a tender cookie. Overmixing can develop gluten, making the cookies tough.

Step 5

Divide the finished dough into equal 20g portions and shape them into your desired leaf design, or use a scoop to place them onto the baking sheet, ensuring ample space between each cookie as they will spread slightly during baking.

Step 6

Bake in a preheated oven at 180°C (350°F) for 15-18 minutes, or until the edges of the cookies are lightly golden brown. Adjust the baking time based on your oven’s performance.

Step 7

Once baked, carefully transfer the cookies to a wire rack to cool completely. Allowing them to cool fully will ensure you achieve the perfect crispy texture.
