Ingredients

  • 250g Korean Angelica (Chamnamul) (approx. 1 pack)
  • 0.5 Tbsp Soy Sauce for soup (Guk-ganjang)
  • 0.4 Tbsp Salt
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Perilla Oil (Deulgireum)
  • A pinch of Toasted Sesame Seeds

Cooking Instructions

Start with one pack of fresh Korean Angelica (Chamnamul), which is about 250g. You can usually find this at local markets or grocery stores.

Trim the root ends of the Chamnamul. Remove any discolored or wilted parts, and slightly trim the very ends for a cleaner look.

Wash the Chamnamul thoroughly under running water. It’s important to rinse it multiple times to ensure all dirt and debris are removed.

Cut the clean Chamnamul into bite-sized pieces. Since Chamnamul can be quite long, cutting it into about five pieces will make it easier to mix.

Bring a pot of water to a boil. Blanch the Chamnamul for about 40 seconds. Be careful not to overcook it, as this can diminish its crisp texture and aroma.

Immediately after blanching, drain the Chamnamul and rinse it under cold running water. This shock in cold water helps to retain its crispness.

Gently squeeze out excess water from the rinsed Chamnamul with your hands and place it in a large mixing bowl. Squeezing out the water is crucial for the dressing to adhere well and prevent the salad from becoming too watery.

Now, let’s prepare the seasoning for the Chamnamul salad. In a small bowl, combine 0.5 Tbsp of Guk-ganjang (soy sauce for soup), 0.4 Tbsp of salt, 1 Tbsp of minced garlic, 1 Tbsp of perilla oil, and a pinch of toasted sesame seeds. Mix well to create the dressing.

Add the prepared seasoning to the bowl with the Chamnamul. Gently toss and mix the ingredients with your hands, as if you’re massaging them (called ‘jobal-jobal’ in Korean). Be gentle to avoid mashing the delicate greens.
