Spicy Deodeok Salad and Grilled Deodeok Recipe
I miss the special deodeok salad my mother-in-law used to make, so I’ve been making it often at home lately. Although it’s not wild deodeok, you can still enjoy a delicious grilled deodeok dish with careful preparation. This recipe features the aromatic flavor of deodeok combined with a sweet and spicy sauce. Complete a healthy and tasty meal with this wonderful dish!
Main Ingredients
- Deodeok 1kg
- Scallions 4 stalks
Deodeok Grill Seasoning
- Soy sauce 5 Tbsp
- Gochujang (red chili paste) 1 Tbsp
- Gochugaru (red chili flakes) 3 Tbsp
- Plum extract 3 Tbsp
- Corn syrup 3 Tbsp
- Minced garlic 1 Tbsp
- Sesame seeds 1 Tbsp
- Sesame oil 1 Tbsp
- Soy sauce 5 Tbsp
- Gochujang (red chili paste) 1 Tbsp
- Gochugaru (red chili flakes) 3 Tbsp
- Plum extract 3 Tbsp
- Corn syrup 3 Tbsp
- Minced garlic 1 Tbsp
- Sesame seeds 1 Tbsp
- Sesame oil 1 Tbsp
Cooking Instructions
Step 1
I bought 1kg of fresh deodeok at the market for a good price. To peel the deodeok easily, soak it in hot water before peeling. After removing all the skin, wash the deodeok thoroughly under running water and then cut it in half.
Step 2
Place the halved deodeok on a cutting board and gently pound it with a mallet or the back of a knife. Be careful not to pound too hard, as you want to soften the fibers so the seasoning can penetrate well, rather than crushing it.
Step 3
In a bowl, combine 5 Tbsp soy sauce, 1 Tbsp gochujang, 3 Tbsp gochugaru, 3 Tbsp plum extract, 1 Tbsp minced garlic, 3 Tbsp corn syrup, and 1 Tbsp sesame oil. Mix well to create a delicious seasoning sauce. Ensure all ingredients are evenly blended.
Step 4
Add the pounded deodeok to the prepared seasoning sauce and gently mix. Combine the deodeok and sauce thoroughly with your hands. This mixture can be enjoyed as a deodeok salad (muchim) right away.
Step 5
Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the seasoned deodeok and grill until golden brown and slightly charred. Flip occasionally to prevent burning. This completes your delicious grilled deodeok!
Step 6
Finally, garnish with chopped scallions for a beautiful presentation and added flavor. (I forgot to add them this time, but be sure to add them for a delicious finish!)
