Inspired by the beloved garlic steak from Mad for Garlic, I’ve recreated this dish that my wife absolutely adored. This recipe provides detailed ingredients and step-by-step instructions to help you craft a restaurant-quality steak experience at home.

Fresh Steak and Abundant Garnishes

  • 400g High-Quality Beef (thick cut recommended)
  • 3/4 Fresh Onion
  • 8 Whole Garlic Cloves (for aromatic depth)
  • 4 Slices of Zucchini
  • 4 Asparagus Spears
  • 4 Cherry Tomatoes
  • 4 Slices of Green Onion

Special Garlic Sauce and Flavor-Enhancing Seasonings

  • 3 Tbsp Minced Garlic (the heart of garlic steak!)
  • 4 Tbsp Canned Corn Kernels
  • 100ml Milk (for a creamy texture)
  • 3 Tbsp Honey
  • A splash of Red Wine (for added complexity)
  • 1 Pinch of Salt (to balance flavors)
  • 3 Olives (Kalamata or Lychees recommended, for a hint of brininess)
  • Olive Oil, as needed
  • A pinch of Black Pepper
  • 2 Tbsp Store-bought Steak Sauce (for convenience)
  • 1 Tbsp Sweetened Condensed Milk (for a smooth sweetness)

Cooking Instructions

First, gently pat the beef dry with paper towels to remove any excess moisture. Season both sides generously with salt and pepper. Drizzle with olive oil and gently massage it into the meat. This marinating step helps the flavors penetrate deeply, making the steak more delicious.

For the garnish, prepare the onion: dice 1/4 of the onion finely, slice another 1/4 into wedges, and finely grate the remaining 1/4. For an extra layer of flavor, you can add a small amount of red wine to the grated onion before blending. (Optional)

While the steak is marinating, prepare your garnish vegetables. Slice the whole garlic cloves thinly. Cut the zucchini into thick rounds. Trim the tough ends off the asparagus spears. Wash the cherry tomatoes. Cut the green onions into segments suitable for grilling alongside the steak.

Place the sliced garlic cloves into an air fryer preheated to 180-190°C (350-375°F). Air fry for about 7 minutes, then give them a gentle shake and continue for another 5 minutes. Cooking time may vary depending on the thickness and type of garlic, so check periodically to prevent burning. The roasted garlic will be fragrant and incredibly delicious with the steak.

Heat a heavy-bottomed pan over high or medium-high heat with a drizzle of olive oil. Sear the steak for about 1 minute to 1 minute 30 seconds per side to create a beautiful crust and lock in the juices. (This timing is for medium-rare). Remove the steak from the pan and set it aside on a plate. To keep it warm and add extra richness, place half a pat of butter on top of each steak as it rests; allow it to melt over the meat.

Grill the prepared garnish vegetables (onion wedges, zucchini, asparagus, cherry tomatoes, green onions) on the same pan used for the steak, or on a separate grill pan, until they are nicely charred and tender. Grilled vegetables add a wonderful contrast in texture and flavor to the steak.

Now, let’s make the creamy garlic sauce. In a blender, combine the canned corn kernels and 100ml of milk. Blend until smooth. Heat a non-stick skillet over medium-low heat with a touch of olive oil. Sauté the minced garlic until fragrant, then pour in the blended corn mixture. Stir in 1 tablespoon of sweetened condensed milk and simmer gently, stirring occasionally, until the sauce slightly thickens. Set aside.

Next, prepare the flavorful steak sauce. In a heated skillet with olive oil, sauté the minced garlic and diced onion over medium heat until the onion turns translucent. Add the grated onion and cook for a minute longer. Once it starts to bubble, add the red wine to cook off the alcohol. (Optional) Stir in the steak sauce, honey, and chopped olives. Whisk gently for a moment until well combined. This creates a rich and savory sauce.

Your components are now ready! Place the rested steak on a serving plate. Generously spoon the warm garlic sauce over the top of the steak. Finally, arrange the roasted whole garlic cloves on top of the steak to enhance its aromatic garlic flavor. (You can also sprinkle with crushed red pepper flakes for a touch of heat, if desired).
