  • 2 large eggs
  • A handful of fresh chives (approx. 30-40g, or to taste)

Seasoning & Others

  • 1-2 Tbsp oyster sauce (or soy sauce can be substituted, adjust to your preference)
  • 1-2 Tbsp cooking oil (or butter)
  • 1 bowl of cooked rice (warm rice is recommended)

Cooking Instructions

First, crack 2 eggs into a bowl and whisk them well, adding a pinch of salt (optional). Wash the fresh chives, pat them dry, and finely chop them into about 0.5cm pieces. If you enjoy a stronger chive flavor, feel free to use a bit more.

Heat about 1-2 Tbsp of cooking oil in a preheated pan over medium heat. Pour in the whisked egg mixture and stir with chopsticks to create soft scrambled eggs. Be careful not to overcook them until they become firm; remove them from the heat while still slightly undercooked and set aside in a separate bowl.

In the same pan used for the scrambled eggs (add a little more oil if needed), add the chopped chives and stir-fry for about 30 seconds to 1 minute. Sauté just until the chives soften slightly and release their fragrant aroma. Avoid overcooking, as the chives can become mushy.

Now, add 1 bowl of warm cooked rice to the pan. Stir in 1-2 Tbsp of oyster sauce. It’s best to start with less and adjust to your taste, rather than adding too much at once. Gently break apart the rice clumps with a spatula while stir-frying. Add the prepared scrambled eggs back into the pan and continue to stir-fry for another 1-2 minutes until everything is well combined. Once all ingredients are harmoniously blended, turn off the heat and serve in a bowl. Your delicious egg and chive fried rice is ready!
