Aromatic Deodeok Salad Recipe

Introducing our aromatic Deodeok (Korean wild root) salad, a staple during Korean holidays! Deodeok is excellent for your throat during seasonal changes, boasting a unique fragrance and a satisfying crisp texture. Tossed in a sweet and spicy gochujang-based dressing, it’s a perfect side dish for rice or a delightful appetizer for drinks. It has a mild flavor without the bitterness of bellflower root, making it enjoyable even for children.

Ingredients

  • 400g peeled deodeok
  • 1 bunch green onions
  • 1 Tbsp minced garlic

Seasoning

  • 2 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp maesilcheong (Korean plum extract)
  • 2 Tbsp corn syrup
  • 1 Tbsp perilla oil
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar

Cooking Instructions

Prepare 400g of peeled deodeok. There was a lot of deodeok available at the market for the holidays. You can buy about 1kg, use some for this salad, and the rest for delicious grilled deodeok. Use the thinner roots for the salad and the thicker ones for grilling. The seasoning is the same for both, so keep that in mind!

Cut the prepared deodeok into bite-sized pieces. Alternatively, you can gently pound it with a mallet and tear it along the fibers. This helps the seasoning penetrate better, making it even more delicious.

Wash and finely chop the green onions. Since we’re using a lot of garlic for the holidays, I’ve already minced mine. Using freshly minced garlic will enhance the flavor.

Grind the toasted sesame seeds for added nutty flavor. Freshly ground sesame seeds have a much richer aroma.

Now, let’s make the delicious seasoning! In a bowl, combine gochujang, gochugaru, soy sauce, corn syrup, minced garlic, chopped green onions, ground sesame seeds, maesilcheong, and perilla oil. Finally, add sugar and stir until all ingredients are well combined. (You can also use sesame oil).

Deodeok salad tastes best with a touch of sweetness. Deodeok available these days might not be as sweet as it used to be. Deodeok harvested in spring after winter is the most flavorful. Taste the seasoning and adjust the sweetness by adding more sugar, corn syrup, or rice syrup if needed, according to your preference.

Add the prepared seasoning to the deodeok and mix gently but firmly, ensuring the seasoning coats the deodeok thoroughly. Be careful not to mash the deodeok too much.

Your fragrant and delicious deodeok salad is complete! With this same seasoning, you can create delicious grilled deodeok by pounding and tearing the deodeok, then coating it with the sauce and grilling. Enjoy deodeok in two wonderful ways!
