Healthy Deodeok Rice Recipe for Bronchial Health and Blood Sugar Management, Made Easy with an Electric Pressure Cooker

Main Ingredients- 3 cups White Rice
- 1 cup Glutinous Brown Rice
- 4 cups Water
- 92g Peeled Deodeok (Korean Balloon Flower Root)
- 8 Dried Jujubes (Korean Dates)
Seasoning Sauce- 2 Tbsp Soy Sauce
- 2 Tbsp Water
- 1 Tbsp Minced Green Onion
- 1 Tbsp Toasted Sesame Seeds
- 2 tsp Gochugaru (Korean Chili Flakes)
- 1 tsp Perilla Oil
- 2 Tbsp Soy Sauce
- 2 Tbsp Water
- 1 Tbsp Minced Green Onion

Cooking Instructions
Step 1
First, rinse the white rice and glutinous brown rice in cold water until they become somewhat translucent. Drain the washed rice in a colander and let it air dry for about 20 minutes. This drying step helps the rice grains remain separate and fluffy when cooked.
Step 2
Place the dried rice and brown rice into the inner pot of your electric pressure cooker. Add the measured 4 cups of water and let the rice soak for about 20 minutes. Soaking the rice beforehand will result in a softer and more delicious cooked rice.
Step 3
Gently rinse the peeled deodeok under cool running water to remove any dust. Cut the deodeok into bite-sized pieces, about 3-4 cm in length. Cutting along the natural grain of the deodeok will make it more appealing.
Step 4
Rinse the dried jujubes under running water. Remove the seeds from the center of the jujubes and then thinly slice them into strips. The sweet aroma of the jujubes will subtly infuse the rice, adding a delightful depth of flavor.
Step 5
Add the prepared deodeok and sliced jujubes evenly over the soaked rice in the pressure cooker pot. Close the lid, select the ‘White Rice’ cooking mode, and press the cook button. The electric pressure cooker will handle the rest, creating a delicious deodeok rice dish for you.
Step 6
While the deodeok rice is cooking, let’s prepare the seasoning sauce. In a small bowl, combine 2 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp minced green onion, 1 Tbsp toasted sesame seeds, 2 tsp gochugaru (Korean chili flakes), and 1 tsp perilla oil. Mix everything thoroughly. Feel free to adjust the amount of soy sauce or gochugaru to your preference.
Step 7
Once the cooking is complete, carefully open the pressure cooker lid. Gently fluff the rice from the bottom up with a spatula, being careful not to mash the grains. This ensures the aroma of the deodeok and jujubes is well distributed throughout the rice, enhancing the overall flavor. Serve hot with the prepared seasoning sauce and enjoy!
