- 2 medium potatoes
- 50g carrot
- 1.5 Tbsp curry powder

First, prepare all the ingredients needed for this dish. Peel and julienne the potatoes and carrot.

Wash the potatoes, peel them, and then julienne them into thick strips, about 0.5 cm thick. If they are too thin, they might break apart while stir-frying, so aim for a moderate thickness.

Add 0.5 Tbsp of coarse salt to the julienned potatoes and mix thoroughly. Let them sit for about 10 minutes to draw out moisture. This step helps the potatoes maintain their shape and absorb flavor well during stir-frying.
